Zucchini appetizer with salmon

Ingredients

1 medium zucchini 1
Lightly salted salmon fillet 200 g
Grated Parmesan or any available cheese 150 g
One lemon juice 1
Vegetable oil 1 tbsp. l.
Sesame seeds 1 st. l.
Salt pepper Taste
For the sauce: champignons 150 g
White part of leek 0,5
Red bell pepper 0.5 pcs
Dry white wine 150 ml
Heavy cream 150 ml
Vegetable oil 2 tbsp. l.
Turmeric 0.25 tsp

Cooking method

  • Wash the zucchini and cut into longitudinal plates 0.5 cm thick.Sprinkle with salt and pepper and fry in well-heated oil for 4 minutes on each side,
  • Cut the salmon fillet into thin slices, sprinkle with lemon juice. Fry the sesame seeds in a dry skillet until golden brown.
  • Spread the grated cheese evenly over the zucchini strips. Put salmon slices on top, sprinkle with sesame seeds, wrap in rolls and secure with wooden skewers (toothpicks).
  • Prepare the sauce. Peel the mushrooms, wash, chop finely. Remove the core from the pepper, cut the pulp into small cubes. Rinse the onion, chop into thin half rings.
  • Heat the vegetable oil and fry the mushrooms until golden brown, about 8 minutes. Pour in wine and cook until its volume is halved.
  • Add cream, bell peppers, leeks and turmeric, season with salt and pepper to taste, heat for three minutes and remove from heat. Serve the rolls with the sauce. Can be garnished with lettuce leaves, olives, etc.

Note

Caution! Keep your eyes on sesame seeds! Can be overcooked very quickly. From my point of view, this dish is good without sauce
