Liver (stew with meat) - my family's recipe

Ingredients

Pork meat (flesh shoulder with fat) 700 gr.
Peeled potatoes 900 gr.
Peeled onions 150 gr.
Fresh peeled carrots 150 gr.
Milk 300 gr.
Garlic 4-5 tooth.
Butter 30 gr.
Coarse sea salt 1 tsp
Spices to taste
Chopped greens

Cooking method

  • All of us cook potato stew. I'll tell you about our family recipe.
  • My grandmother called this dish - Liver. And we are short - a cookie. The peculiarity of its preparation is that the liquid will be replaced with hot water !!! milk.
  • It is easy to prepare, it eats with gusto.
  • After peeling, the potatoes along with the onions (the onion is cut into quarters) are poured over with cold water overnight. I used to think that this was done on purpose in order to cook faster in the morning. It turns out that my mother and grandmother kept the potatoes on purpose. They said that it tastes better this way. Then they washed it, but crumbled it last. The onion was slightly squeezed. Since in the water it “blooms” like a flower. Carrots are crumbled in half rings, onions into cubes. Chop the garlic.
  • My beloved women cooked potatoes in a pot or duck. I cook in a multicooker pressure cooker. The technique is evolving, you know.
  • It is good to warm up the bowl of the multicooker-pressure cooker on the Baking (or the highest temperature in your pressure-cooker-multicooker). Put butter and onion with carrots. Fry until soft and lightly beautiful, but do not overcook. Then add the finely diced pork.
  • Fry for another 10 minutes.
  • Only now we chop the potatoes and immediately add them to the bowl to the meat with vegetables as we cut them.
  • Salt, pepper and mix well.
  • Then pour everything in hot (not boiling or warm, but hot) milk. Close with a lid. For the sake of fairness, it must be said that neither mother nor grandmother ever did such a hassle with frying. Everything was laid immediately raw without frying. Poured over with milk and stewed. Therefore, you should choose the lazier or more troublesome method.

  • Now we set the Baking program for 30 minutes. Immediately set the pressure to 1 (0.3), then when the steam starts to go actively, we transfer it to 2 (0.5) and, when the pair breaks through again, to 3 (0.7). At the end of the program, set the Extinguishing mode for 40 minutes. The pressure is at 3 (0.7).
  • When the multicooker turns off, we do not release the pressure manually. Let the valve fall by itself.
  • Done. Serve, be sure to sprinkle with chopped herbs, with any snacks and salads, sauerkraut, mushrooms. It's classic and delicious.
  • If you cook in a pot or rooster, then after adding all the ingredients, cook for 40 minutes over high heat. Then another about an hour on a small one.

Note

I love to stew potatoes. I have another recipe. Here the potatoes have a completely different taste, as they are more crumbly. The cookie tastes milder. Try it.
