Homemade spicy red currant kvass

Ingredients

Red Ribes 150-200 gr.
Filtered or boiled water 1 liter
Sugar 100 g
Carnation 2 bottles.
Ground cinnamon on the tip of a teaspoon
Fresh yeast 3 gr.

Cooking method

  • Wash the currant berries, knead with a pusher. Add sugar and cover with warm water. Throw cloves and cinnamon into a container. Activate the yeast by dissolving it in a small amount of water from the currant and pour it into kvass. Do not cover the container. Leave until bubbles appear. It took me 5 days at a temperature of 20-22 degrees. It got colder here. Stir occasionally.
  • Then strain the kvass and bottle, seal the bottles tightly and store in a cool place. Kvass can be drunk one day after standing in the refrigerator. I also read that it is not recommended to store homemade kvass for more than 3 days!

Note

This is the most delicious and aromatic kvass I have ever tasted. Sweet, fragrant, spicy and effervescent.
This is already the second batch - the first was not saved for filming. Households managed to weep.

And regarding the use of red currants - last season I made a sauce for meat, very similar to lingonberry. But the red currant has its own zest.

Take a glass full of frozen berries. Fresh yeast is a tiny piece. Calculate approximately by the volume of the pack. I always buy a 100 g pack. and divide it into 8 conditionally equal parts. each turns out to be about 12-13 gr. then it is easier to count the quantity. although it's time to get weights!
you can take 1 gr. dry yeast or 1/2 tsp. leaven.

glad you liked! it got cold too. but by next weekend they predict +27. and there is still a whole shelf of currants. so we can get drunk!
