Ingredients

Fresh spinach 800 g
Leek (white part only) 150 g
Green onions 100 g
Dill 4 tbsp. l.
Chicken egg 2 pcs
Chees Feta 250 g
Cream 15% 100 g
Salt taking into account the salinity of feta cheese
Ground black pepper to taste
Puff pastry 2 sheets 700 g
Milk for greasing the dough on top

Cooking method

  • I found on the website 2 recipes for this delicious Greek spanokopita pie (σπανακόπιτα), but since both recipes are significantly different from mine, I decided that it was worth sharing it with you. After all, there are never too many pies !!!! This pita, I was taught to cook by my friend Agni - a Greek woman from the western part of Greece - the city of Yanino. Agree that such a filling preserves the beneficial properties of spinach and greens more, it has a fresh and aromatic taste, and it cooks faster. Highly recommend, try it!
  • Rinse spinach leaves under running water, dry and cut into large ribbons. Place in a colander and lightly salt. Mash well with your hands and squeeze well from the juice.

  • Cut the leek into thin slices.

  • Add feta cheese and eggs well mixed with cream, grated on a coarse grater, pepper and lightly salt, taking into account my recommendations.

  • Mix everything well.

  • Place a sheet of puff pastry on a baking sheet covered with baking paper and line the filling on it, retreating 2 cm from the edges.

  • Cover with a second sheet of dough and join the edges together very well. Divide the pie into portions by making cuts-basting, but not cutting through the dough to the end. I do it with a pizza knife. Grease the cake with milk.

  • Bake in an oven preheated to 180 "C for 40-45 minutes. Focus on your oven!
