Ingredients

For the test
Flour from 400 grams (depends on flour)
Water 1 glass
Egg 1 PC.
Matsoni, kefir or other fermented milk product 2 tbsp. l.
Vinegar 9% 1 tsp
Soda ¼ h. L.
Salt 1 tsp
Rast. oil 1 tbsp. l.
For minced meat
Meat (better than different types) 0.5KG
Onion 100g
Salt pepper taste
Garlic, finely chopped 4-5 large teeth
Greens
Curry
For the sauce
Water 2 glasses
Onion 1 medium
Garlic 2 cloves
Fat 0.5-1 tbsp.
Tomato paste 2 tbsp. l.
Salt pepper taste
Bay leaf 1-2 pcs.

Cooking method

  • Knead a hard dough and let stand for at least an hour in a cool place.
  • Cooking the sauce.
  • Lightly fry the finely chopped onion in fat, add tomato paste and stew a little, then pour in water, add salt, pepper, garlic and bay leaf. Bring to a boil and, after reducing heat, carefully lower our prepared rolls with the pinched side down. Then increase the heat and, bringing to a boil, cook for 10-15 minutes. Depends on the thickness of the roll. Willingness can be easily determined by appearance.
  • Attention, the sauce should cover the rolls no more than 0.5 cm to their top edge.
  • Minced meat is easy and simple to prepare, as you are used to doing it. If the minced meat is not very fat, then add water to it for plasticity.
  • Cooking. Roll out the dough into a circle 3-4 mm thick (thicker than on dumplings). Distribute the minced meat on it, sprinkle the minced curry,

  • and roll it up. We pinch the edge along the long side. Cut into pieces 5-6 cm in size. We pinch the rolls on one side so that the minced meat remains inside and the roll does not unfold.

The recipe for this dish was shared with me, back in 1990-1991, by a classmate, an Armenian girl Nani (who once sat on Leonid Brezhnev's lap, saw the photo in person). I can't vouch for the accuracy of all the vowels, namely the A and O in the name, so if someone can confidently tell you, I will be grateful. The dish, in fact, is quite easy to prepare, quick (all the ingredients can be prepared in advance), but tasty and beautiful.
