Ingredients

Cooking method

  • boil potatoes (I do not like in the peel, although according to the recipe it is necessary), pass hot through a press

  • add eggs, salt, flour - at your discretion from 0.5 tablespoons to 1.5 tablespoons for each potato, someone loves dense dumplings, someone tender, I add 5 tablespoons for 10 potatoes, divide the dough into 3 parts, on a rug sprinkled with flour, I slightly knead each part separately and pass it through a press (for the same size dumplings).

  • No press? roll out the sausage and cut into equal pieces, you can flatten them slightly. In any case, prepare one part of the dough and cook the dumplings (throw in boiling water, cook for 2-3 minutes after floating). If you knead the entire volume at once, the dough becomes rare and requires additional flour, respectively, after that there will be more dense, and even "clogged" dumplings.
  • Press owners - sprinkle flour on the substrate, it is more convenient to work this way. We put the cooked dumplings in a deep bowl and pour over with sunflower oil (0.5 tablespoons per serving) so that they do not stick together.

  • Boil the remaining portions, cover the prepared dumplings with a lid, let them wait.
  • Do not digest (delicate can burst!)
  • We turn to the veal: wash, clean from the films, cut into pieces of which the medallions will later be cut, put in a plate and add 2 tablespoons of vinegar. Leave for 10 minutes
  • Fry onions in a cauldron, add meat, fry lightly, pepper immediately, add bay leaf and simmer for 1.5-2 hours, adding a little water. Salt after an hour of stewing, in the middle of the process.

  • When the veal is ready, put it on a plate, cool, cut into pieces 0.5-0.8 cm thick (preferably with a slicer)

  • Blanch the onion in the liquid remaining from the stewing, if there is little liquid, add milk or water.

  • Stir the sour cream with flour (from 1 tsp to 1 tbsp) and pour into the sauce, check for salt, add 1 tsp of sugar (this is mandatory), let it boil, return the meat to the sauce and boil for 5-7 minutes.
