Dumplings with apricots (Marillenknodel)

Ingredients

cottage cheese 250 g
egg 1 PC
butter (soft) 20 g
flour 120 g
lemon peel 1 tsp
apricots 8 pcs
brown sugar (pieces) 8 pcs
salt

breadcrumbs 50 g
powdered sugar 2 tbsp. l
cinnamon 1/2 tsp

Cooking method

  • The Wachau Valley near Vienna is known for its mild climate and is considered the main wine region of Lower Austria, and these places are also famous for their apricots (Marillen), which sentimental Austrians call "Wachau gold". In spring, at the time of flowering apricot trees, the whole valley smells fragrant and looks just fabulous. Another scenic period is in the summer, harvesting, when the large gardens along the Danube become literally yellow-orange from the abundance of ripe fruits, and the thick apricot aroma overrides all other smells.
  • So, in order to make apricot dumplings ...
  • Cottage cheese (it must first be weighed out, for this you can put the cottage cheese in a sieve, put in a bowl and let it drain overnight in the refrigerator) mix in a bowl with eggs, butter, a pinch of salt and lemon zest. Add flour and knead the dough. Cover the dough and leave in the refrigerator for 1 hour.
  • Wash and cut the apricots, remove the seeds and put a piece of sugar in the middle. Connect the halves.
  • Boil enough water in a large saucepan, add salt and sugar.
  • On a lightly floured work surface, roll the dough into a roll and divide it into 8 pieces.
  • Make a flat cake from each part, put an apricot in the middle of each cake and squeeze it on all sides with dough, make a ball and roll it on the table.
  • Place the finished dumplings in boiling water. As soon as they float to the surface of the water, reduce the heat and simmer them under a slightly open lid for about 12 minutes.
  • At the same time, melt butter in a skillet. Add bread crumbs and fry until golden brown, stirring constantly. Add sugar and cinnamon, stir.
  • Remove the finished dumplings with a slotted spoon from the water. Sprinkle with cinnamon sugar crumbs before serving.
  • You can also sprinkle the dumplings generously with powdered sugar or serve with custard.

  • Another faster option is Marillenknödeln. Make dumplings from the dough (in this case, it is better to add less flour, or take 70 grams of semolina), boil and serve with mint apricot compote.

But it sounds something like: "Ma-ri-len-kne-del" (here you also need to pronounce the letter "yo" in the penultimate syllable and round your lips with a tube).
