protein 3 pcs.
powdered sugar 200 g
vanillin

Cooking method

  • Since childhood, I remember the taste of sweets such as cakes with baskets, Prague cake and Kalach cake. If the first two recipes have already been mastered, then Kalach did not even think about the cake that it could be reproduced at home. And so I think, let me look for a recipe. I couldn't find something on the Bread Maker forum. Found it on another site and baked it yesterday. Yes, this is the taste of childhood. Now how did I cook.
  • Biscuit:
  • To prepare the crust, separate the whites from the yolks. Beat the egg whites until firm peaks.

  • Add sugar in small portions while whisking. Then introduce the yolks one at a time.

  • Introduce dry foods (flour, starch, baking powder, vanillin) in three steps.

  • The dough will be very similar to just beaten egg whites with sugar, very white and fluffy. I was mixing in a food processor.

  • Put the resulting mass in a mold (do not grease the mold) covered with baking paper. According to the recipe, bake in the oven for 30 minutes at 180 degrees. I baked in MV for 60 minutes.

  • Impregnation syrup:
  • To prepare the syrup, boil the sugar with water for 3-5 minutes over medium heat until the sugar dissolves. Add cognac. Soak the cut cakes with this syrup.
  • Chocolate cream:
  • To prepare chocolate cream, prepare milk syrup (boil milk with sugar), boil for 2-3 minutes until sugar dissolves. Beat the egg in another cooking container and pour in the milk syrup in a thin stream, whisking constantly. Then bring this container to a boil over medium heat for 1-2 minutes (do not boil), also constantly stirring with a whisk. Remove from heat, cool to room temperature. While the milk-egg syrup is cooling, beat the butter until a white fluffy mass. Then add the cooled milk and egg syrup in small portions to the butter. At the end, add cocoa, vanillin, cognac.
  • Protein cream:
  • For the protein cream, beat the proteins with powdered sugar until a smooth, thick consistency.

  • Cut the cooled biscuit (6-8 hours) into 2 parts. Soak in syrup.

  • Then with a brush I gently smeared the surface of the cake with yolk. I was afraid of how the protein cream would behave and smeared it with 1 yolk, but then I realized that you can use all 3 yolks. It will even be more beautiful.

  • Put the finished cake in the oven under the grill to acquire a ruddy protein mass. This is 5-7 minutes, I have a little more than I should have blushed. Sprinkle the finished product with icing sugar.

But I never found in that book a cake with lemon impregnation, two-color biscuit cakes (very dark, most likely coffee, logically lemon and coffee) and I don’t remember what the cream was ...
