Cooking method

Tula gingerbread - a regional variety of printed gingerbread, the most famous type of Russian gingerbread.

As a rule, Tula gingerbread has the form of a rectangular tile or flat figure. Now it most often contains a jam or condensed milk filling.

Gingerbread has been known in Tula since the 17th century. The first mention of the Tula gingerbread is contained in the scribe book of 1685. Currently, Tula gingerbread cookies are made at the Tula enterprises "Staraya Tula" and "Yasnaya Polyana", as well as by a number of smaller producers.

The Tula Gingerbread Museum is dedicated to the Tula Gingerbread Museum, which was opened in Tula in 1996.
Tula gingerbread is prepared as follows:

Add honey, eggs to softened butter and mix thoroughly.
Knead the dough on sifted flour with soda and melt water.
Filling: boil the jam with sugar so that it becomes thick enough and does not spread.
Roll out the dough, fold in two layers, place the filling between the layers.
Place in a very hot oven for 1-2 minutes.
Cool and bake for another 5 minutes in a hot oven.
Cool again and brush on sugar.

Gingerbread (almost Tula) When everything goes well, add soda. The mass will foam. Hold it for 5 minutes.
Gingerbread (almost Tula) We remove from the water bath. Let it cool slightly and add half the flour and spices. We are waiting for it to cool completely, so as not to shift the flour. We knead the dough. The dough is soft, like plasticine.
Gingerbread (almost Tula) Divide the dough into 2 parts. You can make not one big gingerbread, but portioned ones. Roll one piece into a rectangle (5 mm thick). Transfer with a rolling pin to a sheet covered with baking paper. We distribute the jam. We leave a free edge around the entire perimeter, otherwise the dough will not stick together. The jam should be very thick. Cover with the second layer. We level. Press m around the perimeter with a fork. We kill two birds with one stone: we seal and make a drawing. We make a drawing on top. We put in the oven. I baked at 170 degrees for 15 minutes.
Gingerbread (almost Tula) We take out. And immediately we begin to cook the glaze.

Mix the powder with milk and cook after boiling for 4-5 minutes over low heat.

Quickly grease the still warm gingerbread with icing.Freezes very quickly.
