Polish Makovets

Ingredients

Dough:
Milk 200g.
Wheat flour 100g.
Fresh pressed yeast 12g.
Sugar 25g.
Dough:
Opara
Melted butter 50g.
Soft fat-free cottage cheese 50g.
Sugar 25g.
Salt 1h l.
Wheat flour 300g.
Filling:
Poppy 100g.
Dried apricots 50g.
Liquid honey (or molasses) 100g.
Milk 50g.
Additionally:
Yolk * for lubrication 1 PC.
Powdered sugar for dusting 1h l.

Cooking method

  • For dough, heat the milk to 37C. Add sugar and flour, mashed with yeast by hand until a homogeneous crumb is obtained.
  • Beat with a food processor for 2 minutes. Cover and leave for 30 minutes.
  • After a while, add melted butter, cottage cheese, beat for 1 minute.
  • Then add flour, salt, sugar, mix at 1 speed for 2 minutes. Then knead at 2 speeds for 5 minutes. The dough is smooth, slightly sticking to the hands and to the bowl.
  • Put the dough on the table, form a ball, place in a container slightly oiled, cover with a towel and leave in a warm place for 1 hour.
  • Prepare the filling. Bring honey and milk to a boil, add poppy seeds and finely chopped dried apricots. Boil for 5 minutes, cool. The filling is thick.
  • Next, knead the dough, spread the dough into a rectangle 30cmx35mi with greased hands. Spread the filling evenly on top, not stepping up 1.5 cm. to the edge:

  • Roll up with a roll, pinch the edges and place in a greased mold with the seam down:

  • Grease with oil, cover with a towel and leave in a warm place for 50-60 minutes.
  • Before baking, grease with yolk (* I greased with milk).
  • Bake in an oven preheated to 200C for about 40 minutes.
  • Cool on the side. Sprinkle with powdered sugar and chop after cooling completely.

Note

Makovets is a national Polish delicacy. In the original, this dessert is made of rusks and "poppy dough" soaked in sweet syrup (ground poppy seeds are soaked in hot sweet milk, raisins, almonds and candied fruits - candied fruits or their pieces) are added to it.
