Ingredients

Cooking method

  • after baking, remove from the oven after half an hour and wrap with a towel. when it cools down completely, I put a plastic bag on top of the towel so that the crust is not hard and cuts well, does not crumble. an hour and a half before the end, take out the scapula!

The reasons may be:
flour / liquid balance - you went over a little liquid in bread, according to the balance 480/320 - in fact, approximately 280 + 30 honey + 30 oil + 30 vinegar = 370 ml. liquid of different density
And perhaps your covering of hot bread with a bag affected the crumb, the crumb did not give off condensation, the liquid remained in the crumb.

But - this is a matter of taste for each of us!
