Rice with green peas and almonds

Ingredients

Basmati rice (or any other long grain white) 125 g
Boiling water 400 g
Salt 3 \ 4h. l.
Cardamom green 4 boxes (slightly open)
Turmeric 1 \ 4h. l.
Ghee (or vegetable) oil 1 st. l.
Cinnamon (stick) 4cm
Carnation 6 pcs.
Almonds (petals or thinly sliced) 40 g
Frozen green peas 130 g

Cooking method

  • Rinse the rice, pour boiling water over, cover and leave for 10 minutes. Then drain the water.
  • In a bowl with a thick bottom (I have a cast-iron wok), heat the oil over medium-low heat. Saute the cloves, cinnamon, cardamom, and almonds until the almonds are golden brown. I overdid it a bit.)
  • Add rice, fry, stirring occasionally, for 3-5 minutes.
  • Dilute turmeric in a little water.
  • Pour boiling water, turmeric into rice, cover, reduce heat to low and cook without stirring for 15 minutes. Do not salt !!!
  • Then add the peas and cook for another 5 minutes until all the water is absorbed and the rice becomes soft and fluffy. If there is a lot of water, you can open the lid at the very end of cooking.
  • Turn off the heat and leave the rice on the stove for another 5 minutes to "walk".
  • Season with salt before serving. Serve hot.
  • Delicious and unusual rice. Can be served as a side dish or as a separate dish. From myself I would add 1-2st. l. lemon juice for sourness.
