This cake made a big impression on me: both because it was hot and hot, and because it did not look like pizza or any other cakes I had tried before! On top of that, I suspected that it was easy to execute!
  • It is not surprising that I have long cherished a plan to bake Flammkuchen at home and introduce the household to German cuisine. And now the hour of experimentation has come!
  • Flammkuchen literally translates as "flaming pie", in Russian this dish is called even more romantic - Tart Flambé.
  • Flammkuchen is very popular in Alsatian and South German (Alemannic) cuisines. It looks like a flat open pie filled with white cheese, sour cream (Schmant), onions and pieces of bacon or bacon. There are many variations of this cake, and today I will make Flammkuchen mit Kürbis - Pumpkin Tart Flambé.
  • Most of the time in this unpretentious recipe will take the preparation of the dough. But we will solve this problem quickly: we put fermented baked milk, salt, olive oil, flour and yeast and set the mode of quick kneading of dough on our favorite bread maker. (The consistency of the ingredients depends on the specific model).

  • In the process of kneading, we make sure that the bun is tight and flexible. We put the resulting bun to rest under a napkin for 30-60 minutes.

  • At this time, slowly, anticipating delicious moments alone with flammkuhen, we prepare the filling. We wash and cut the pumpkin into large pieces, peel the inside and peel the outside. Cut our pumpkin into as thin slices as possible. Any low-melting cheese should also be cut into thin slices. Thoroughly washed green onions, cut or rip by hand - whatever you like!

  • Then we put our dough on a baking sheet and start creating. First, generously spread the dough with sour cream sauce. Decorate the top with slices of pumpkin, onion and cheese. Sprinkle with olive oil on top, salt and pepper to taste.
  • You need to send this beauty to the oven for 15 minutes at a temperature of 200-220 degrees.
  • After the appearance of a golden crust around the edges, remove the pie from the oven and add the final touch: pieces of pork belly or ham. We also bake the remaining 2 pies.

  • And, of course, on the next flammkuhen I could not resist and improvised a little with the form and content.
  • For the second pie, I baked all the ingredients together at once, including the pork breast. A richer baked taste is obtained.

A very interesting cake.
The pumpkin was cut with a vegetable peeler - it turned out very thin. I replaced green onions with onions (I don't like green ones, sorry), put the ham right away.The taste is bright, unusual, but harmonious. Next time, I'll trim more pumpkin.
