Cooking method

  • Cod and Raisin Pie is a typical Galician dish. Salted cod is used, pre-soaked and boiled. I used fresh cod fillets.

The total amount of liquid should be approximately 60% by weight of the flour. Pour HP into a bucket, add flour, yeast and salt and knead a soft, smooth dough. Knead for about 20 minutes. Leave the dough for 1 hour.
