Poppy seed cake

Ingredients

Dough:
dry fast-acting yeast 1.5 tsp
wheat flour c. from 350-370 g
milk 170 g
yolks 2 pcs
granulated sugar 50 g
salt 1.25 tsp
butter 45 g
vegetable oil 15 g
Filling:
poppy 300 g
granulated sugar 60 g
cream 10% 200 g
Chatterbox:
yolk 1 PC
milk 1 tsp

Cooking method

  • Dough:
  • We send yeast (I have a saf-moment), 300 g of flour, salt, sugar, yolks and warm milk to a bucket of a bread machine or a bowl of a combine. Knead the dough for 5-6 minutes, then stop the kneading and leave the dough for autolysis for 15 minutes.
  • Add softened butter, vegetable oil and one and a half tablespoons of flour. We add the rest of the flour as needed during kneading, until a soft, non-sticky dough is obtained (it took me only 350 g of flour).
  • Fermentation for 90 minutes at room temperature, with one stirring in the middle of fermentation.
  • Filling:
  • Grind poppy seeds in a coffee grinder. Bring the cream to a boil with granulated sugar, add the poppy seeds. Cook, stirring occasionally, until the liquid is completely evaporated. Cool down.
  • Bakery products:
  • Poppy seed cake
  • Dust the table with flour. Put out the dough, knead. Roll 3/4 of the dough around with a diameter of 29-30 cm (mold diameter 26 cm + small sides).
  • Cover the bottom of the dish with baking paper. Put the dough into a mold, forming small sides 1.5-2 cm high. Lay out the filling.
  • Roll the remaining piece of dough and cut into strips. Put the "lattice" on top of the filling, tucking the ends of the strips between the mold and the cake (rolled the dough into a layer and cut it with a roller to cut the mesh, then transferred it to the cake).
  • Proof for 40 minutes under the cling film until the volume doubles.
  • Before planting in the oven, grease the top of the pie with a mash of yolk and milk.
  • Bake the cake in an oven preheated to 220C (convection 200C) degrees with steam for the first 7-8 minutes, then drop the temperature to 190C (convection 170C) degrees and bring the cake to readiness. The total baking time for me was 40 minutes.
  • Remove the finished cake from the mold, put on a wire rack and cool.

By the way, it is better to transfer the mesh by winding it on a rolling pin (dust the dough with flour before rolling). I carried it with my hands and it turned out uneven in places.
