Cherry Pie with Mascarpone Cream

Ingredients

flour 200 g
butter 120 g
small egg 1 PC.
sugar 2 tbsp. l.
salt 1/4 tsp
filling:
fresh cherry pitted 650 g
Amaretto liqueur 4 tbsp. l.
mascarpone (fatty non-acidic cottage cheese) 250 g
cream 33% 250 ml
powdered sugar 75 g
cherry jam 3 tbsp. l.

Cooking method

  • The recipe for this cake has been waiting in the wings for 3 years, all the time I missed the cherry season, I thought I’ll make it, but the cherry suddenly ended)))). The pie is very easy to prepare and only a shortbread base is baked. I would say that this is a classic summer berry pie - a thin base of crispy dough, delicate cream and juicy cherries with a pleasant sourness - believe me, no one will remain indifferent. Another important addition is that such a cake can be easily prepared in winter, as a delicious reminder of summer, frozen cherries are perfect for it.
  • Sift flour, add softened butter, sugar, mix everything until smooth, add an egg and knead the dough. Roll the dough into a ball, wrap in plastic wrap and refrigerate for 30 minutes. (I make the dough at night, bake in the morning).
  • Transfer the dough into a split pan (in my D24 cm) and spread the dough in a thin layer over the shape, forming high sides.
  • Put food parchment on top of the dough, add hard beans and place in a preheated oven (up to 190 grams) for 12-15 minutes, then remove the beans and paper and bake for another 10-12 minutes until golden brown. Cool it down. (I just pricked the base hard with a fork and baked it without beans, the dough remained even).
  • Prepare the filling: put the cherries in the pan, add jam and 100 ml of water (I only added cherry juice). Cover and cook for 3 minutes. Place the berries in a bowl and refrigerate. Return the pan to the stove and boil the syrup hard so that it thickens, turn it off and add the liquor (I replaced 1 tablespoon of cognac).
  • Whisk the cream and icing sugar until fluffy and stir in the mascarpone in several steps. Place the cream gently in a sand base and top with the cherries and syrup.
  • Chill the pie in the refrigerator for 1 hour.
