Ingredients

Veal, beef or chicken liver. 500 g
Carrot 2 medium size
Bulb onions 1 large onion
Butter 30 - 70 g
Cream 30 - 50 g
Ground nutmeg, allspice, bay leaf. taste
Salt 1/3 tsp
Cognac (brandy) optional
Semolina for sprinkling forms

Cooking method

  • This pate can be classified as an easy-to-prepare recipe, and due to the minimal amount of ingredients and low fat content, it is well suited for baby food.
  • It does not take long to cook, but the result is good both for a weekday, and it is not shameful to serve it to the festive table!

  • 1. We wash the liver, remove all films, veins and ducts, cut into pieces and soak in milk for 20 minutes.
  • In a chicken or turkey liver, we remove the places spoiled by spilled bile (this happens), carefully cut out whole gallbladders so that they do not burst.

While the liver is soaking, peel the carrots and onions, cut into large pieces, put in a thick-walled saucepan, pour in vegetable oil, add bay leaves, allspice and cloves (optional) and simmer the vegetables until the aroma of fried onions appears (the onions turn golden brown) ... Stir and make sure that the onion does not burn in any way.

  • 3. Remove the spices from the pan. Add butter, washed liver and a little hot water to the pan so that the liver begins to languish, and not fry, leave for 15-20 minutes.
  • 4. A minute before the end of stewing, add a couple of tablespoons of cream, boil for a minute, add salt and a pinch of nutmeg, or black pepper.
  • 5. Remove from heat and whisk while hot in a blender or grind with an immersion blender. If there are none, we pass it twice through a meat grinder, using the grill with the smallest holes.

  • You can add a spoonful of brandy
  • We put it in a container for serving or storage.
  • And that's all, the pate, in principle, is ready! But!
  • In our family, we prefer the baked pate. It is with additional baking that the taste matures, harmonizes and acquires a creamy, slightly toasted flavor.
  • To do this, at the end of stewing, add a little more cream and a spoonful of semolina, which will not be felt in the finished pate, but only binds it better.
  • Choosing a baking dish. I prefer a few small ones - it's more convenient to store and serve this way.
  • Lubricate it with oil and sprinkle with a little semolina, shake off the excess semolina.
  • We spread the workpiece into a mold, cover it with foil on top, fixing it along the sides, and put it in a heated one to 180 grams. oven (airfryer, airfryer - the fastest option) for 15-20 minutes, depending on the amount of pate and the size of the form.
  • You can bake it open if you feel like you have gone too far with liquid. In this case, for a beautiful top, put how many small pieces of butter on the surface of the pate.

Oh, how delicious !!! I cook in almost the same way, only without cream (they are not in the refrigerator at the right time), but I also like to put a couple of cloves of garlic when stewing and grind with them. In my opinion, stews give this pate a more delicate taste than if they are fried. Right now we are finishing the next portion.

Of course, if there is a lot of oil, the more tender and tasty the pate, the better the structure! Who can argue! But for someone losing weight, 30 grams of oil and 1 tbsp. l semolina is preferable! I myself love the fat one, but I limit myself and for the everyday table I do it, but more often;)

Noooo, not so ... When there is a lot of oil, then there is a LOT of it, but 30-70g per 0.5kg of liver (as in the recipe) is the very thing, there is also vegetable oil there.
