Evgeniy, I did not feel the harshness in this cake, apparently the coconut actually absorbs liquid. I also have cakes based on ready-made sponge cake and coconut flakes, where the coconut really looks like gum, and the base turned out to be very dry and crumbs. I didn't even post the recipe here.
