Ingredients

Potatoes 1.5KG
Wheat flour 250 - 300 gr
Eggs 2 pcs
Salt 1 tsp
Apples 2 - 3 pieces
Butter (for greasing pies) 100 g
Vegetable oil (for greasing the baking sheet)

Cooking method

  • 1. Boil the potatoes in their skins. Allow to cool. Peel and mash the cooled potatoes. You need to knead at a fast pace for some time, until stickiness appears. This is the tedious thing about this recipe. If you knead it by hand, it is difficult to hold the bowl, it sticks to the potatoes quite strongly, and your hands get tired quickly. Therefore, I offer options:
  • - skip the potatoes 2-3 times through a meat grinder;
  • - grind in a food processor (it works very well, though you need to load it in portions);
  • - use a blender (it turns out even better than in a food processor, BUT ... my blender couldn't stand it the second time - it burned out).
  • I must say right away that if lumps remain, it's not scary, they won't ruin anything.
  • You should end up with something like this:

  • 2. Add eggs, flour and salt to the potatoes and knead the dough. Put in as much salt as you like, because the lack of salt is immediately felt. The dough turns out to be quite soft, and no matter how much flour you put, it will still stick to your hands, so the table should always be abundantly sprinkled with flour.

  • 3. Cut the apples as you like - I cut them with petals - but not in thick pieces, otherwise the dough will break. I always choose sour apples, best of all "Antonovka", all the same it is a savory dish. And you take those that you like.
  • 4. Divide the dough into pieces. Roll each piece into a cake (I just knead it with my hand). Do not forget to sprinkle the table with flour, otherwise you will not clean it! Put apples on one half, cover with the other half and pinch the edges.

  • 5. Grease a baking sheet with vegetable oil, lay out the pies and bake / roast in the oven until golden brown from below, then turn over to the other side and brown. Once I tried to do this in a frying pan, I didn't really like it, the apples did not have time to soften properly.

My grandmother baked these pies in a Russian oven. The aroma was extraordinary. Grandmother greased them with oil, put them in a bowl and put them in a warm oven, and we, that is, grandchildren, carried them warm throughout the day. Yes, a lot of things were invented from potatoes. I still remember my grandmother making potato pancakes, "grandma", "sorcerers". All this is from raw grated potatoes. By the way, "sorcerers" can be called pies. My grandmother made them with meat, but the filling can be anything.
