Vegetable salad with rice

Ingredients

Sunflower oil 500 g
Carrot 1 kg
Bulgarian pepper 1 kg
Onion 500 g
Rice 0.5 tbsp.
Tomatoes 2 Kg
Salt 2 tbsp. l.
Sugar 4 tbsp. l.
Vinegar 2 tbsp. l.

Cooking method

  • Boil rice until ready. Grate the carrots, chop the rest of the ingredients. Mix everything except the vinegar. Boil for 30 minutes, add vinegar at the end. Add lavrushka, 1 teaspoon pepper, allspice, in general, whatever you like. Arrange in sterilized jars, roll up.

This time I cooked in a slow cooker. Approximate time - 45 minutes, "Quenching" program.

I have 9% vinegar. But actually, the recipe is not specified. The banks were sterilized on a small cartoon. On steam mode, I put a double boiler and, in the old fashion, one jar each. I'll add it to the recipe now.

I liked doing it in the cartoon, not such a heat in the kitchen as from the stove. But! Since I was making a double portion at once, and this is 8 liters, I had to cook in a cartoon in several runs. This is convenient for me, I closed the first portion, while the second was cooking, I put the child to bed. So see how it is more convenient for you to do.

About 10 years ago we had very, very difficult times - there was no work, there was no money at all, and we ate this salad for two weeks for breakfast, lunch and dinner. And my family is not small: three sons + husband + me. They cooked soup from this salad, and simply spread it on bread (the bread was also baked then). We didn't do it for a long time, but now we started to close it again. The same salad is still tasty to make with white beans (or beans) instead of rice, but you need to sterilize well then, the beans are very picky in conservation, they can rip off. Oh, I honestly didn't do it in a multicooker, I have a 15 liter cauldron for this. So I generally put the rice raw. He managed to cook in that mixture during cooking. I always let the peasants shit with a liter. Have never complained that it was raw.

I already wrote about the volume, which I had to do in several rounds. The main thing for me was to switch off on my own while I put the child down, otherwise it could be digested on the stove if I lay it down for a long time.
