Note

Pearl barley will be even tastier if you add carrots to the recipe. But without it, it's also very tasty!

Should the barley be soaked? Of course, yes, if you have a carriage of time and do not have a pressure cooker. In a pressure cooker, it cooks beautifully without soaking, like the navels. And the softness can be adjusted to suit your taste, depending on whether you like barley and navels of normal consistency, or to "chew with your lips." I love this and that.

If for manual cooking, then the barley should definitely be soaked for 12 hours. After soaking, rinse thoroughly (as if grains are hot). I think you will need more water in an ordinary saucepan (I forgot how to cook on the stove.I haven't used it for a couple of years now and will never return to it). You may need twice as much water as cereals. But do not overdo it, it is better to add more later if you see that there is not enough water. Add navels to the groats and simmer together for an hour and a half, then add the fried onions-mushrooms- (carrots), and simmer everything together for another half an hour, so that the pearl barley is saturated with the aromas of vegetables.
