Note

"Lentil and vanilla jam is a signature dish. Its creator, a famous three-star Michelin star, Frenchman Régis Marcon. He suggests using this unusual jam, spread on breakfast bread, mixed with yogurt. In combination with balsamic vinegar, lentil jam will be a wonderful addition to A wide variety of chicken dishes. Ideal with soft cheese or butter on a baguette. The original recipe uses green lentils to make this jam, but you can use yellow lentils. "

In my opinion, a very interesting taste. It seemed to me like chestnut jam, and to my daughter it looked like yokan.

Yes, Olga, there is a lot of sugar, and you say correctly, what kind of jam without it. This amount is needed for better preservation, you can try to reduce it if it is not stored. But you do not need to greatly reduce it, you will not eat it with spoons, so spread a small amount where the thread is.

Kroshik,
I made this jam several times, and its taste differed quite strongly depending on the ingredients, namely the type of lentil and the type of brown sugar, and also on how it was crushed.

Oh well, it should be satisfying! And the taste is probably mainly influenced by ginger and citrus fruits? Galya, a very interesting recipe. I will do it for myself, I love legumes, healthy .......
Marcella
I love lentils, but this is the first time I've heard about jam. I will definitely try. Thank you very much. I made jam from seaweed, now there will be more lentils. It's just awful.

Yeah! Don't eat much Natalia, citrus and ginger only slightly add the desired notes.

So I understand that the author does not mind, then I am with my jam. It just so happened, I need seaweed, or rather not me, but a sick health. I don't know how anyone, but I love everything that swims in water, except for algae. And then I spied on the recipe: Dried seaweed - 100 g, sugar -500 g, vanilla sugar - 10 g, grated lemon zest -2 tsp. Boil cabbage for 15 minutes, you get about 1 kg of ready-made. Pour sugar into 2 tablespoons of water and boil the syrup well. Chop the cabbage in any way and pour in the syrup, leave for 15 minutes. Stir and simmer over medium heat for 20 minutes, stir. In this place, for those who do not particularly need iodine (maybe people are just fans of seaweed), you can add 1 teaspoon of lemon acid. But it kills iodine, I don't add. Cool, pour into a sterile container. Store in the refrigerator, consume 1-2 tablespoons a day. It is worth it. I'll tell you right away that I do it in smaller proportions. Prescription is too much.

By the way, thanks for the information about the fact that acid kills iodine.

I already drove for lentils ... I bought a steamed green Altai - the first time I saw this. Let's see what happens.
Steamed is not suitable for jam - it is not boiled. She is for salads - the very thing.
I had to drive after the usual.
I won't post the picture - it's still not as beautiful as yours.
As for the taste. The taste turned out to be a pleasant citrus, but my ginger was stale, apparently exhausted already and did not give an obvious pungency.
I’ll bake the pie, I’ll add ginger, or I’m afraid it’s going to be a little bland in the pie ... Maybe a drop of lemon juice, do you think? In the pie, I mean.
Gala
Of course I do. I have been waiting for them (female students) for 3 months.
Ol, I used this lentil

Lentil jam
Which is small practically does not boil over. I crushed it with difficulty with a blender, and then passed it through a sieve. The large one is boiled down normally. Ginger, of course, is better fresh and juicy. It gives a very good taste note. The vanilla pod is also a must.
I don’t understand where are you going to add lemon juice to a pie or jam? I wouldn't add to jam.
And with this jam I did sand strip... An excellent option, the next day it gets even better.
Premier
The cake, of course, is this one. And lemon juice in a jam filling. Do you think the taste will be easier?
Gala
Ol, I would not add, there are enough citrus components. Yes, it seems to me that the taste will be simpler, the lemon will overwhelm itself.
Premier
Clear.
Gala

Then I wait another three months

just kidding

Premier
I will try to cope within this period.
Premier
Check mark! You were right, the next day the jam tasted much more interesting ... even with a lack of ginger.
I tried, tried, then realized that there was not enough for a pie!
Gala
Olya, it's even better with ginger!
