Chocolate tart with raspberries

Ingredients

butter 75g
powdered sugar 48g
flour 125g
salt pinch
egg 1 small
ground almonds 15g
vanilla 1/4 tsp
For filling
fat cream 100ml
raspberry 125g
dark chocolate (from 65% cocoa) 135g
butter 35g

Cooking method

  • preparing the dough.
  • Cut the butter into small pieces. The oil should be soft.
  • Sift flour onto a board. Sprinkle with salt and spread the butter slices evenly. rub butter and flour between palms until a homogeneous, friable and free-flowing mass.
  • collect the masu with a slide, Make a depression in the middle. Pour an egg into it, add powdered sugar, vanilla and almond flour. Mix all ingredients with your fingertips until smooth. Mix without enthusiasm, not very energetic.
  • Knead the dough with your palms forward and roll the dough into a ball.
  • Put the dough in the refrigerator for at least 4 hours. (I had it for almost a day).
  • Grease the tart dish or line with baking paper.
  • Put the dough in a 22cm diameter tart dish. Chop with a fork.
  • Cover with baking paper and sprinkle with beans (or whatever works best for you).
  • Bake in the oven at 180C until tender. It took me 20 minutes.
  • Chill the tart.
  • While the dough is baking, prepare the filling.
  • Puree raspberries with a blender and squeeze the juice.
  • Bring the juice to a boil.
  • Pour the cream into a ladle and bring to a boil. We remove from the fire.
  • Pre-grind the chocolate on a grater (I took it in tablets) and add to the cream.
  • Stir with a whisk until the chocolate is completely melted.
  • Pour in raspberry juice. Stir well with a whisk.
  • Add butter in small pieces. We knead everything well until a silky mass.
  • Put the filling on the chilled crust. We level.
  • Decorate with raspberries on top, lightly pressing them into the chocolate.
  • We put in the refrigerator until the filling hardens.
  • We pour a good cup of coffee, invite friends and enjoy.
