Bavarian raspberry-strawberry cream-souffle from Maida Heatter

Ingredients

strawberry jelly Mriya 1 package (90g)
boiling water 240 ml
sour cream 20% 120 ml
Strawberry ice cream 240 ml
lemon juice 0.5 tbsp. l.
frozen raspberries 283 g
frozen strawberries 142 g

Cooking method

  • Raspberry-Strawberry Bavarian
  • very fast, light and aromatic dessert
  • ingredients are given in 6 plates of 250 ml
  • Pour the jelly into a large bowl, pour boiling water and stir with a whisk until dissolved.
  • add sour cream and stir until smooth.
  • cut frozen ice cream into pieces and add to a bowl, stir until dissolved, until smooth, homogeneous.
  • add lemon juice and frozen fruits. mix to disassemble the berries one at a time, first with a spoon, and then with your hand. it's cold, but while we break the fruits with our hands, the mass cools down enough so that the fruits do not fall to the bottom.
  • pour quickly into molds, leaving enough space to garnish with whipped cream on top.
  • put the molds in the refrigerator for 2 hours. or leave it overnight. decorate with 35% whipped cream with powdered sugar and vanilla. Maida sprinkles the whipped cream with finely chopped pistachios, and puts in a curl of chocolate.
  • just looks gorgeous in heavy wide glasses and smooth-walled shapes. for the photo session, only the molds with a picture remained, in them it is not so attractive, but still
  • delicate dessert, very fruity. goes great in the summer heat and in winter, it seems to me, it will be just sooo tasty, because the strawberries-raspberries in the dessert are as fresh as they are

Note

with the light hand of Luda, mariana_aga bought the Maida Heatter's Book of Great Desserts. her husband owned a restaurant for which she prepared desserts. Maida writes that this cream soufflé - Raspberry-Strawberry Bavarian - is also in the top three desserts that were sold out in the first place. of course, I was wondering what kind of dessert it was

I don't know what a real bavarian tastes like .. the dessert that I got is magically delicious, urgently freeze strawberries and raspberries until the season))

Maida's original recipe contains 85g of gelatin with strawberry flavor. it is suddenly who has access to this

you should not make this dessert in one large form, it turns out to be very tender, it will lose all appearance when serving.

if a berry is missing, you can take only raspberries or strawberries.

Zhivchik
Lyudochka, I can imagine how delicious ...
Only I am confused by frozen fruits in summer, when you can put fresh ones in dessert. In winter, it is clear that only frozen.
nakapustina
Lisss's , and can you replace strawberry jelly with orange?
It's just that I haven't seen strawberry jelly for 100 years, but I bought a lot of orange Dr. Oetke (very tasty). I think the taste will not deteriorate or take risks?
Zhivchik
nakapustina, I'm not Liss, but it seems to me that orange jelly will not go well with strawberry raspberries.
nakapustina
Sorry

nakapustina, I don’t even know .. it tastes so fresh, berry, brightly raspberry-strawberry .. how will it be with an orange, who knows .. but you can try as an experiment, half a portion, and suddenly it will come out a hundred times tastier ? done quickly, 10 minutes - and you're done. only then wait until it freezes

Zhivchik, Tanya, well, what can I tell you - they also looked at me with suspicion when I began to freeze fresh raspberries and strawberries for dessert, but here I need frozen ones - it stabilizes the souffle mass with its cold, it grasps faster and keeps the berries in weight, does not give them lay a layer on the bottom. surprisingly, in the finished dessert the berries taste absolutely fresh, neither in color nor in taste can you say that they were frozen .. look at the photo, what color
nakapustina
Lisss's , thank you, I'll try ... I was here recently making ice cream "strawberry with cream" according to the recipe lesik_l, so I added an orange (and a banana) to the strawberries, it was very tasty!

Lyudochka, I fully support you, because for more than one year I have been doing my own Blanc Manget only with frozen strawberries. Completely different taste and effect. Frozen berries are more suitable for this dessert also because they slowly melt in the gelatinous milk mass and let the juice out. So he gives a certain sourness and piquancy to the dessert. And the berry itself becomes soft, like the dessert itself.
Fresh berry does not soften and feels somehow rough in such a delicate dessert.

Lilechka, for sure! how well you noticed! here in the photo of the cut, where the strawberries are on the cut, so I took the dessert with a teaspoon, and the berries are simply cut with a spoon in a souffle, they do not break it, but this is due to the fact that the berry was frozen

Luxurious cream!
AlisaS
Lisss's, and what kind of strawberry ice cream did you take for such an appetizing dessert?
Homemade or store-bought? If store-bought, then which one?
Lisss's
AlisaS, I always take Rud, for me it was the most delicious this time there was no strawberry Rud, so it is in this dessert - Rud ice cream. delicious ...
AlisaS
Thank you, Lisss's, need to try!
I also saw such ice cream here.
Lisss's
it's a pity that no one liked the dessert

and I have it now on duty - tasty, effective, and done quickly

here I made a cutout closer, how it looks. this time I had crumbled raspberries, so there are more small inclusions. but how it tastes better - whole or crumbled - I don't understand. delicious in both cases

Lyudok, this year raspberries are worth their weight in gold

I don't like compote without raspberries, so I bought 1 kg, divided a handful of cans
Lisss's
that and with us - 35 UAH / kg - you can shoot yourself

you can put more strawberries. Now I'm thinking, what other berries to try? blueberries, I think, should be good, but what else?
himichka
35-lousy, great-50!

Maybe you should try very ripe apricots or peaches?
Lisss's
by the way, an option! finely chop and freeze, and then thaw! Lenok, here's a chick for your resourcefulness!
himichka
Thank you !!!

I remembered this about apricots, because I have been meditating for three days on my tree. There are a lot of apricots, but it is really impossible to get it, with this construction site it was cut off all, very high. And the scaffolding has already been given away, and I hoped for them so much ... so a straight road to my beaten apricots in jam and dessert
Zhivchik
Lud, Liud, Lud ... while you're here. Put the vases in the refrigerator? Am I getting it right? Not in the freezer?
I just made your dessert.
Lisss's
yes, in the refrigerator!

birthday girl, getting ready?
Zhivchik
Yeah ...
I "nurtured" your dessert for a year. Rather, since last year, I froze strawberries with raspberries. Especially for him.
Lisss's
crazy how mature I hope you like it, otherwise I won't blow my mind
Zhivchik
Lyudochka, I have THANKS for the dessert.

Overall, I liked it. But, as for me, an extra raspberry. Well, there are a lot of grains.
And my men said it was very tasty.

Luda, thanks for the recipe! I will do it!

But I don’t eat bones from an apple. No, well, I aaabazy raspberries, only raw.
But in frozen, some bones melt more bony (this is so for me).
Zhivchik
People, I made your dessert one more time. There was no Mriya jelly. We bought Eco.
So his gelling qualities are worse. The dessert turned out to be semi-liquid.
Lisss's
It’s not for nothing that my friend once said a long time ago - only Mriya! she loves jelly, she always has the main desserts, broken glass there, sour cream all the jelly now we will know why
