  • Oven temperature +230 ... 240C
  • Baking time 10 ... 12 min
  • Dough. Water heated to +35 ... 40C is poured into the container (60 ... 70% of the total amount of liquid), prepared yeast is added, flour is added (35 ... 60% of the total amount of flour provided for by the recipe) and mixed until a homogeneous mass is obtained within 5 minutes. The surface of the dough is sprinkled with flour and placed in a room with a temperature of +35 ... 40C for 2.5 ... 3 hours for fermentation.
  • Dough. When the dough increases in volume by 2 ... 2.5 times and begins to settle, add the rest of the liquid with salt and sugar dissolved in it, mashed boiled beets, then mix, add the rest of the flour and knead the dough for 8 ... 10 min. Add melted margarine 5 minutes after kneading. The dough is left for 2 ... 2.5 hours for fermentation. During fermentation, the dough is kneaded once or twice.
  • Rolls. Balls weighing 68 g are formed from the finished dough and left for proofing for 40 ... 50 minutes. Before baking, the surface of the products is greased with an egg. Bake at a temperature of * 230 ... 240C for 10 ... 12 minutes. Finished products can be sprinkled with refined powder at the rate of 2 grams per 1 piece.

ZARVAS: 300 g. On 100% whole grain flour (you can also use ordinary wheat)
DOUGH:
Whole grain wheat flour (or premium) - 300 ... 350 gr
Flour for dusting - 15 gr
Sugar beet juice (one small will be enough) - 85 ... 64 ... 100 gr
Granulated sugar - 20 gr
Salt - 7 g
Molasses or honey - 1 tsp
Margarine - 13 gr. or vegetable oil - 1-2 tbsp. l.
Yeast -7 gr.

Refined powder for dusting (optional) - 20 gr
Knead the dough and let it detune for about an hour - 1.5 (if the leaven is weak and you make it without yeast, then detuning may be longer)
Form buns and bake at T + 230 ... 240C
Baking time 10 ... 12 min.
