Zebra buns with chocolate layer

Ingredients

Dough:
dry yeast (saf-moment) 1.5 tsp
wheat flour 450 g
milk 180-200 ml
salt 1.2 tsp
granulated sugar 2 tbsp. l
butter 75 g
egg (large) 1 pc (55-60g)
Chocolate interlayer:
egg white 1 pc (35-40g)
granulated sugar 60 g
flour 35 g
cocoa powder 30 g
milk 120 ml
butter 15 g
For the top:
yolk + 1 tbsp. l of water

Cooking method

  • Dough:
  • Dissolve salt and granulated sugar in warm milk, add 400 grams of flour, yeast and an egg. Knead the dough with a mixer (hooks) or in a bread maker. After 5-6 minutes of kneading, as soon as the dough grasps into a single lump, stop kneading and pause for 8-10 minutes.
  • Add remaining flour and softened butter. Knead the dough again until smooth, elastic. The dough is soft, not sticky. Leave the dough to rise in a warm place, away from drafts, for an hour and a half.
  • Chocolate interlayer:
  • While the dough is fermented, prepare the filling.
  • In a saucepan, combine protein, flour and granulated sugar, mix until smooth.
  • In another saucepan, bring the milk to a boil, add cocoa powder and stir (instead of cocoa powder, you can use dark chocolate, then you need 80 ml of milk and 50 g of chocolate).
  • While stirring constantly, add the milk mixture to the protein in a thin stream. In the original recipe, it was the other way around, the protein mixture was added in small portions to the hot cocoa drink. I don’t know why, probably because of my curvature, the mass didn’t turn out homogeneous, or the protein curled up, or the flour was “brewed in lumps,” I don’t know, but I changed the technology.
  • Return to the fire and, without stopping stirring, bring the mixture to thicken, stir better with a spoon, not a whisk. The consistency of the finished mass should resemble a very thick boiled condensed milk, "keep its shape." Add butter, stir and cool to room temperature.
  • Lay the chocolate mass between two layers of plastic wrap and roll it out with a rolling pin into a layer 25x15 cm (you can also knead it with your hands).
  • Forming:
  • Lightly dust the table with flour. Put the dough, knead and roll into a layer 25x45 cm.Place the chocolate filling in the center of the dough:

  • Roll out the dough again into a layer, 7-8 mm thick and fold:

  • Expand with the narrow side facing you:

  • Roll it out again, it is finished to get a layer 7-8 mm thick, I got a square of about 45x45 cm.
  • Roll up and cut with a sharp knife into 2 cm thick "washers". Place on a baking sheet lined with baking paper.

  • Cover loosely with plastic wrap and let stand for 1 hour. Before planting in the oven, grease the buns with a mash of yolk and water.
  • Bake at a temperature of 200-210C (convection 180-200C) with steam for the first 5 minutes, then reduce the temperature to 180-190C (convection 160-180C) and bake the buns until tender, until golden brown. The baking time depends on the oven.
  • Put the finished buns on the wire rack.
