Mushroom noodle soup

Ingredients

Dry mushrooms (handful) 40g
medium carrots 1 PC
medium onion 1 PC
eggs 2 pcs
vegetable oil 5 tbsp. spoons
flour / cup 300ml 1 cup

Cooking method

  • Put dry mushrooms in the dishes that you use in the microwave. To fill with water. Put in the micra for 5-7 minutes at full power.
  • Then pour the broth into a saucepan, but not all of it, so that there is no sediment in which there may be sand. Wash the mushrooms under running water, chop finely.
  • Add 2 liters of water, chopped mushrooms to a saucepan with broth. Put on fire and cook for 35 minutes.
  • Grate peeled onions and carrots. Fine carrots, coarse onions.
  • Then lightly sprinkle in four tablespoons of vegetable oil until the color of the carrots changes, do not fry!
  • While the mushroom broth is being prepared, you need to make the dough.
  • The dough is made quite simply. Beat 2 eggs with a fork with salt
  • Add a cup of flour, stir. Pour 1 tablespoon of vegetable oil there.
  • Knead the dough, form a bun
  • Then put the bun into a bag. Leave on the table for 30-40 minutes.
  • And then form a sausage
  • And cut it into 6-8 pieces
  • Roll each piece into a thin cake, but if it doesn't work out smoothly, don't be discouraged, the noodles will still work
  • Dry each cake in a pan. To do this, you need to heat a pan with a thick bottom (I have a cast iron). Do not lubricate with anything. Put the cake into the pan, wait 10 seconds, then turn the cake over and keep in the pan for another 10 seconds. Fold the fried tortillas in a stack.
  • Cut lengthwise into three pieces
  • Cut each piece into noodles
  • The noodles are ready
  • First put the broth into the finished broth, bring to a boil, then add the noodles, stir, bring to a boil and immediately remove the pan from the heat, cover with a lid. Serve after 10-15 minutes. You can put sour cream and herbs in the soup to taste.
  • Delicious soup with a good rich mushroom aroma.
