Ingredients

Meat broth ~ 1 liter
Potatoes 3-4 pcs.
Beans ~ 200 g
Onion 1 PC.
Dry mushrooms handful
Rust oil 2 tbsp. l.
Allspice (I have a mixture of 5 peppers) taste
Salt
Bay leaf 1-2 pcs.

Cooking method

  • This soup was always cooked (and still cooks) by my dad, who is 81 years old. And his soup is tastier, somehow richer than mine. Well, I'm just trying to imitate and copy. Yes, and I wrote the mushrooms without a name, because in our area mushrooms "grow" only in stores, and even those mushrooms and oyster mushrooms. And we buy good dry mushrooms at the market from colorful aunts from central Russia. They call these mushrooms, forgive me our connoisseurs of forum, just "mushrooms for soup". They sell them strung on a string. They say there are several species there, but I just believe them - I still can't tell a fly agaric from a white one. So let's get started.
  • 1. Soak mushrooms and beans in cold water for several hours, preferably overnight. Pour in a little water, cover only slightly. Then, before cooking, strain the liquid - during this time it will become very dark, almost black, and boil mushrooms and beans. I cook them separately in a pressure cooker, it tastes better, and all the water remains, does not boil away.
  • 2. Fry the onion in sunflower oil until transparent.
  • 3. At this time, put potatoes, cut into small wedges, in the boiling broth. After boiling - mushrooms, beans, along with their broths. Salt, pepper, add onions, bay leaves, and cook until the potatoes are tender. We let it brew a little, if the household can endure.

  • P.P.S. And although our family adores all sorts of spices and everything spicy and sour, but in this soup, except for allspice, nothing needs to be added so as not to interrupt the aroma of mushrooms. And further. I love my pressure cooker, but in an enamelled cast iron pot, cooked on the stove, this soup tastes better to me. Maybe because the soup is from childhood, "when the trees were big."
