Ingredients

potatoes 400 g
carrot 1 PC
onion 1 PC
olive oil 2-3 tbsp. l
meat broth 1 l
salt pepper
nutmeg
cream 150-200 ml
White mushrooms 150 g
garlic 1 clove
Champignon 5-6 pcs

  • But I made very minor changes. Instead of meat broth - mushroom. I slightly increased the amount of porcini mushrooms and boiled them.
  • And then the recipe.
  • Dice onions, carrots and potatoes.
  • Heat oil in a frying pan and fry onions, then carrots and potatoes.
  • Potato soup with fried porcini mushrooms
  • Put the fried vegetables in the broth and cook for 20-25 minutes.
  • Then remove the vegetables from the broth with a slotted spoon and grind them with a hand blender until puree.
  • Season with salt and pepper, add a little nutmeg.
  • Pour in the cream, stir.
  • Potato soup with fried porcini mushrooms
  • Now pour the whole mass into a saucepan with broth, mix and bring to a boil.
  • The recipe says that you can use champignons instead of porcini mushrooms. And since now is not the season for fresh porcini mushrooms, we will fry the champignons.
  • Cut the champignons into thin plastics and fry with chopped garlic until golden brown.
  • Pour the soup into a plate and put the fried mushrooms on top.
