Cupcake Viva Mexico

Ingredients

butter 120g
granulated sugar 250 g
eggs (large) 3 pcs
flour 350 g
salt 1/4 tsp
soda 1/2 tsp
baking powder 3/4 tsp
sour cream or yogurt 200 g
zest of 1 lime
1/2 lemon zest
Impregnation:
granulated sugar 100 g
juice of 1 lime about 3 tbsp. l
tequila 2 tbsp. l

Cooking method

  • Grate the zest of one lime and half a lemon on a fine grater.
  • Mix flour, baking soda, salt and baking powder.
  • Whisk the softened butter with sugar and zest and one egg until creamy (at least 5 minutes). Without stopping beating, add eggs one at a time, beating after each for at least a minute.
  • Add flour mixture and sour cream alternately, stir thoroughly each time.
  • Grease the form with butter, spread the dough. We put in an oven preheated to 180 degrees and bake until tender (until a dry match) for 50-55 minutes.
  • Preparing the impregnation for the cake. To do this, with constant stirring, bring lime juice, sugar and tequila to a boil. On the hot cake, make punctures with a toothpick and soak it with the resulting syrup.

Note

If you do not like tequila or do not drink alcohol, then tequila can be replaced with the same amount of water. This won't make the cake worse.

My butter with sugar and half a lemon didn't whip, it's too dry. The dough ended up like a thick butter cream. I cooked it in a Panasonic multicooker, put the baking for 60 minutes + 20 more. After 60 minutes the cupcake is soooo up! but it was still damp inside. Now I fell a little, turned it over on the roof, soaked it, sprinkled it with vanilla sugar a little. True, I didn't finish reading the recipe, I didn't cook the syrup, I just took 2 tablespoons of vodka, water, lemon juice and 3 tbsp. l. Sahara. Cooling down ... the smell of the cake divine endure with the last bit of strength!

curious, but I did exactly that! There was a desire to add a touch of homemade wine to the cake, but not the season. It does not smell of vodka (I literally took 2 tablespoons), the cake smells like lemon, it tastes like lemon (where it was soaked). What is left without impregnation is loose, dryish, almost savory. Next time I will do this: I will buy in Magnet "rubbed strawberries with sugar", dilute the thick with water + a drop of alcohol, pour on top. I did this the day before yesterday with an unsweetened biscuit - they ate it in one sitting.
