Chocolate muffin with prunes and almond praline

Ingredients

DOUGH:
butter 50 gr.
granulated sugar 150 gr.
eggs (large) 2 pcs.
milk 100 ml.
sour cream 150 gr.
bitter chocolate (75%) 85 gr.
cocoa powder 1 tbsp. l.
wheat flour 150 gr.
salt pinch
baking powder 1.5 tsp.
vanilla pinch
prunes 200 gr.
PRALINE:
almond 40 gr.
granulated sugar 100 g
water 60 ml.
GLAZE:
milk 4 tbsp. l.
granulated sugar 2 tbsp. l.
cocoa powder 1.5 tbsp. l.
butter 20 gr.

Cooking method

  • Cooking praline:
  • Finely chop the nuts with a knife.
  • Pour water into a small saucepan, add granulated sugar, bring to a boil and cook, stirring occasionally, for 10 minutes.
  • Remove the saucepan from the heat, add the nuts, stir. Spread the nut mass in a thin layer over a plate greased with vegetable oil. Let it freeze at room temperature and chop it into crumbs.
  • Dough:
  • Warm up the milk, add the pieces of chocolate and stir until smooth.
  • Mix the flour and sift it with salt, vanilla, cocoa powder and baking powder.
  • Beat the softened butter with granulated sugar, add eggs one by one, beating after each for at least a minute, add sour cream and beat a little more.
  • Add milk-chocolate and flour mixture alternately, knead the dough. Add almond praline and chopped (without fanaticism) prunes.
  • We spread the dough in a mold (24-26 cm), greased with butter and put in an oven preheated to 180 degrees. We bake 50-60 minutes until a dry match. Let the cake cool on the wire rack.
  • For the glaze, mix all the ingredients and cook over low heat for 10-12 minutes.
  • Pour the finished cake with icing and decorate with almond petals.

I just do not even know with gratitude I…. or with a complaint….
I lived for myself, did not touch anyone ... I roughly outlined in my head a list of what to bake .... And then this recipe, and the whole line silently moved. Well, I could not resist.
There were no whole almonds, so I took almond shavings for the praline (which saved me from chopping). Instead of vanilla, I took a packet of vanilla sugar. Everything else is prescription.
And here I have a question for you

Add milk-chocolate and flour mixture alternately, knead the dough.
What is the secret of alternating additions? By virtue of my natural laziness, the milk-chocolate mixture swelled all at once, mixed, then added flour. But I wonder what would have changed. How was this supposed to be reflected?
And to my shame and shame, I just noticed that I had forgotten about sour cream.
I don’t know how much I ruined the final product, but I liked what came out wildly. Well, very tasty. Just really, really. Thank you for that!

PySy: did you indicate the amount of ingredients for the glaze for the concept of the proportion of the required products? Or did I brutally boil it? I only managed to grease the very top with the resulting amount.
Sonadora
Anya! What a cupcake! It looks insanely delicious and chocolatey! Thanks for the piece!

In uniformity. I am also lazy, I mix flour and milk at the lowest speed of the mixer, it seems more convenient to me.

I don’t know, I smeared it all over!
