Braid with cottage cheese and orange filling

Ingredients

Dough:
flour 300 g
milk 100 ml
trembling fresh 8 g
yolk 1 PC
yogurt (sour cream) 2 tbsp
sugar 50 g
butter 30 g
rum (cognac) 1 tsp
zest from one orange and half a lemon
vanilla sugar taste
Filling:
cottage cheese 9% fat 250 g
powdered sugar 2 tbsp
egg 1 PC
candied orange peel 50 g
light raisins 50 g
corn starch 1 tbsp
rum (cognac) 50 ml

Cooking method

  • 1. Grind yeast with sugar and leave for 15 minutes. Remove the zest from the orange and lemon and pour 1 teaspoon of rum (cognac) over it.
  • 2. Combine flour, milk, yeast, yolk, yogurt and knead the dough until smooth. Add oil of a plastic consistency, zest and continue kneading for 5-7 minutes. Leave the dough to rise for about an hour.
  • 3. Scald candied peas and raisins with boiling water and pour over rum. Let it brew for thirty minutes.
  • 4. Beat cottage cheese with icing sugar and egg until smooth (it is convenient to work with an immersion blender), add candied fruits and starch.
  • 5. Roll out the dough into an oval 0.5 mm thick. Make cuts on the sides, lay out the filling and form a braid. Allow to distance for 20-30 minutes and bake at 170 degrees for 20-25 minutes. Before baking, brush with yolk, sprinkle with any nuts if desired.

Note

The braid is very fragrant. The zest in the dough and the candied fruit in the filling create an excellent taste balance.
