Lemon cupcake

Ingredients

softened butter 150 g
Sahara 150 g
eggs 4 things
lemon zest and juice 1 PC
sifted flour 210 g
baking powder 5 g
raisins 100 g

Cooking method

  • Soak the raisins in warm water (alcohol, juice, tea) for 30-40 minutes, drain the liquid.
  • Grease a mold (multicooker pan). Grind softened butter with sugar until white.
  • Add eggs, minced lemon zest (only the yellow part), lemon juice,
  • and beat everything with a mixer at medium speed for 5 minutes.
  • Mix flour with baking powder, pour into the butter-egg mixture, add raisins,
  • Stir quickly but thoroughly, put the dough into a mold, flatten.
  • Cook in Baking mode, 50 minutes.
  • After baking, leave in the pan for 15 minutes, then put the cake to cool on the wire rack.

The cake turned out to be moist, with a bright aroma and lemon flavor, the way we love it :) Perfectly warm with a scoop of vanilla ice cream, but cooled down with morning tea-coffee was wonderful too! To make the cake have the same color as in the photo, I grind several saffron stigmas into powder in a mortar, pour 1 tbsp. l. water, vodka, etc., let stand, then add to the dough.
