Ingredients

Pesto sauce:
not tightly packed 200 ml. a glass of basil leaves

garlic 1 clove

Parmesan 1.5 tbsp. l.

Cooking method

  • pesto sauce:
  • grind salt and pepper in a mortar. in a frying pan, brown the nuts a little, but do not fry. also crush nuts in a mortar. Cut the basil leaves with a knife, then transfer to a mortar and continue kneading there. Add garlic, salt and pepper. When everything is mashed enough, you can add nuts and grated parmesan. Mix everything and add a little olive oil until our sauce becomes creamy.
  • You can put all the ingredients in a blender and grind very well.

  • Pour flour into a bowl, make a depression there into which we drive eggs. By gradually mixing our eggs with flour, we get an elastic and elastic dough at the same time. wrap the dough in plastic wrap and place for 30 minutes. in the fridge / I do this on the advice of an Italian chef. Then divide into 2 parts and roll out each one up to 1 mm thick. Cut into squares. I made it about 7x7cm in size.
  • Boil water in a large saucepan. Add a heaped teaspoon of salt. Cook the handkerchiefs for 3 minutes. after boiling. Remove from the water with a slotted spoon (do not pour out the water, you may need it for the sauce).
  • We mix the handkerchiefs with the sauce, add a little water in which they were cooked. And immediately we serve. You can sprinkle with grated Parmesan. I served with toasted bacon and basil leaves. tasty!!!
