Ingredients

Fresh dogwood berries 1.5-2 kg.
Rosemary, fresh thyme (dry) several branches
Marinade

Cooking method

  • Rinse dogwood berries in warm water several times. Lightly chop the berries with a toothpick.

The day before, I cooked a compote with a handful of dogwood, it turned out very sour, so I did not dare to additionally acidify it with vinegar and I got not pickled dogwood, but salty and spicy with sugar. For three kg of berries, I zababahala 600 ml of sugar, 5 tablespoons of salt (with a good slide), a little rosemary, star anise, cloves, and right into the jars I put half a hot green pepper, cut into narrow strips.
It turned out 6 jars of 720 ml, brine was spent on everything about 1.5 liters, I don't know how it will taste, but it looks beautiful!
On one jar, the lid twisted and snapped off, most likely it would not last until winter in the warmth, so we will soon take a sample. :-)
