Autumn fantasy salad

Ingredients

Eggplant 1.5KG
Salad pepper 8 pcs.
Carrot 3 pcs.
Tomato juice 1.5 l
Vegetable oil 1 glass
Sugar 150 g
Salt 2.5 tbsp. l.
Vinegar 9% 1/3 stack
Garlic 1 head

Cooking method

  • Divide the eggplants (you can peel them if you wish), cut the peppers into squares, three carrots on a grater (on my Berner) or cut into strips.

  • Cook carrots in boiling tomato juice for 10 minutes. Then add all the ingredients except the garlic. We adjust the amount of sugar, vinegar, salt to your taste. Cook the eggplant until tender (after boiling for about 10-15 minutes).
  • 3-4 minutes before the end of cooking, add the garlic squeezed through the garlic press.

  • We roll it up in sterile jars.

The output is 6 cans of 0.5 liters each, sometimes it remains a little for a try.

Note

Instead of tomato juice, I always pour tomato paste. For this serving of vegetables I take 1 liter of water and add 200 g of tomato paste. Boil, throw carrots in there.
When I have added all the ingredients, I taste the "marinade", sometimes vinegar has to be added.

If there is not enough liquid in the salad before the end of cooking (although this has never happened to me), add a little water or tomato juice.
