Rice with tomatoes and spinach

Ingredients

Basmati rice 250 g
onion 1 PC.
garlic 2 cloves
tomato 3 pcs.
carrot 2 pcs.
cashew nuts 100 g
spinach 150 g
coriander seeds 1 tsp
cumin seeds 1 tsp
vegetable oil 2 tbsp. l.
salt taste

Cooking method

  • Fry nuts in a dry frying pan, cool and chop coarsely.
  • Peel the tomatoes and cut into cubes.
  • Grate carrots on a coarse grater.
  • Finely chop the onion and garlic.
  • Heat oil in a deep frying pan, fry the onion and garlic until golden brown.
  • Add tomatoes, carrots, washed rice, cumin and coriander and mix well.
  • Pour in 500 ml of hot water and salt. When the water comes to a boil, reduce heat, cover and simmer for about 20 minutes.
  • Then add spinach and cook for another 3 minutes, covered.
  • Remove from heat. Mix. Serve sprinkled with nuts.
