Ingredients

Flour 4 cups
Buttermilk (kefir) 1 3/4 cups
Salt 1 1/2 tsp
Sugar 4 tbsp. l.
(less can be used)
Cold butter
(cut into pieces)
4 tbsp. l.
Soda 1 tsp
Egg 1 PC.
Orange peel 1 tsp
Dried currant 1 cup

Cooking method

  • - Heat the oven to 375F
  • - Combine flour, sugar, soda, salt, oil and mix with a mixer into crumbs
  • - Mix the buttermilk, egg and zest, add to the flour mixture and stir with a mixer
  • - Dip dried fruits in a spoonful of flour and add to the dough
  • - The dough will be very sticky
  • - Put the dough on the surface with flour, knead and shape a couple of times
  • - Put on a baking sheet and bake for 45-55 minutes

  • I made a loaf for half a portion, kneaded the dough in a bread machine in the pizza mode, added a little less sugar and did not put dried fruits.

I downloaded the recipe from somewhere in German. Baked for 1.5 hours at 190 degrees. the result is a cobblestone with thick bark and moist inside.

Kefir and soda should be added to the dough at the very last moment, when the oven is already preheated to the desired temperature, the form is oiled and all the ingredients (of course, except for kefir and soda) are already mixed. Only then add soda to the kefir, quickly mix it with other ingredients (in no case do not mix it for a long time!), Put the resulting dough into a mold and immediately put it in the oven.
