Cooking method

  • 1. Rinse the cherries, remove the seeds. Cut the lemon zest with a knife.
  • 2. Put the cherries and zest in a saucepan, add sugar, cloves and cinnamon. Cook for 15 minutes. without a lid, until the liquid boils away (you can add a little wine or strong alcohol to taste). Cool, remove the zest, cinnamon and cloves.
  • 3. For the dough, mix flour and sugar. Add softened butter in slices, lard, 1 egg, 1 yolk, juice of 1 lemon, a whisper of salt. Knead the dough. If it is too steep, add a few tablespoons of milk. Put the dough in a bowl and refrigerate for 1 hour.
  • 4. Grease a detachable mold with a diameter of about 28 cm with oil, sprinkle with a little flour. Remove the dough from the refrigerator, roll out 2/3 of the dough, put in a mold and make sides 5 cm.
  • 5. Preheat the oven to 175 ° С. Put the filling on the dough and flatten. Bend the edges of the dough inward.
  • 6. Roll out the remaining dough thinly, cut into strips 1 cm wide. Put the strips of dough on the cake. Beat 1 yolk with 1 tbsp. l. milk, grease the dough. Bake for 30-40 minutes. Remove the cake from the oven and cool. Best served the next day, sprinkled with icing sugar.
