Ukrainian shpundra with frozen beet kvass

Ingredients

For soup:
Pork belly 300 gr.
Medium onion 1 PC.
The beets are not big 1 PC.
Vegetable oil 1 tbsp. l.
Water 1 liter
Flour 1 tbsp. l. with a slide
Salt to taste
Dried herbs to taste (I have parsley, basil, celery, dill)
Beet kvass 2 glasses
Fresh dill
For beet kvass
Beet 1 kg.
Warm boiled water 1 1/4 l.
Sugar 2 tbsp. l.
Black rye stale bread 2 slices

Cooking method

  • The kvass recipe is on the site.
  • I cooked it like this. I washed the beets, peeled them, cut them into slices, put them in a glass jar and filled them with water with added sugar. I added crackers and covered the jar with the lid with holes. I wandered kvass for a week, as I put it on the balcony - there is not enough space in the house. Periodically, I removed the gathering foam, which began to buzz the day for 3-4. Soon the foam disappeared altogether, and the kvass became thick and aromatic. Strained and poured into another bowl.
  • Preparation of the spundra.
  • She cooks in a slow cooker - quickly, cleanly and there is no extra heat.
  • We heat the cartoon on the Baking mode with vegetable oil. Cut the brisket not coarsely and fry until golden brown. While frying the meat, clean and chop the onions and beets. Onions - small cubes. And beets - in straws. Add vegetables to meat and fry for another 15-20 minutes. We put the water to boil. Pour in flour, stir. Fill with boiling water, salt to taste and cook until the vegetables thicken and cook for about 15 minutes. At the end, pour in the beetroot kvass, bring to a boil and remove the pan from the multicooker.
  • Serve hot, sprinkle with dried herbs, garnish with a sprig of dill. But for hot weather it will be interesting and tasty to add frozen beet kvass.
  • I frozen kvass in silicone molds in the form of men.
  • It was delicious to just gnaw them, smacking their lips with pleasure - the taste is moderately sweet and rather sour.

Note

A very interesting thick and nutritious soup, something between okroshka and borscht. Prepare very quickly.
