Instead of lemon, I marinated the chicken in vinegar and a heap of onions (well, we do not marinate in lemon, this is not our marinade). I added baking soda and starch an hour after the start of pickling. Held in the marinade for another 20 minutes. Fried and then simmered over low heat for about an hour.
