I did not use the recipes from the instructions. Because I don't eat bread with yeast.
I remember my top crust was not crispy and poorly baked when the bread did not rise well. But in such situations, the sides were heavily baked. When the bread rose well, everything seemed to be fine. I think it's important what ingredients you use.
I don't think it's worth doing this. Since during kneading due to friction, they will already be heated to room temperature and above.

Maybe it just doesn't reach me: how can I put 2-4 long loaves in a small bucket of HP (according to the instructions)?

Still reading the forum I don't understand - what modes "Dough" and "Baking" are constantly talking about? There are no such modes in our HP! There are only different baking modes, which include a full cycle - from kneading to the final result. How, then, is it possible to "separate" these processes if, according to the recipe of the same French loaf, it is required, for example, to postpone the dough for 30-40 minutes, and then place it in the oven and bake? Even if I interrupt the cycle by pulling the cord out of the socket after kneading the bun, how can I then continue it with baking?

P.S. Until now, I have been making all my baked products in a full cycle in BASIC mode, without interruption. I have not tried other modes yet.
