The recipe from the Gastronome's book "About blanks".

Ingredients for 2 half liter cans:

1 kg. horseradish roots
2 tbsp. l. sugar or honey (I like it more with honey-fragrant!)
juice of 1 lemon
5 tsp salt

Preparation:

1.Peel the horseradish roots from the coarse peel with a vegetable peeler. Cut the pulp into pieces and pass through a meat grinder.
2.Add salt, sugar, lemon juice and half a glass of cold boiled water. Mix well and place in dry sterilized jars.
3.Seal the jars and store in a cool dry place (I keep it in the refrigerator)... Horseradish will be ready in 3-4 days.

There is no difference in cooking between raw fresh and ice cream!
