Chocolate cupcake

Ingredients

per cake pan Ø 22 cm
100 g soft butter or margarine
150 g sugar
1 bag of vanilla sugar
a pinch of salt
3 eggs
50 gr flour + 2 tsp. level spoons of baking powder
1 bag of chocolate pudding
2 dessert spoons of milk (20 ml)
75 gr almonds, ground into flour
100 grams of dark chocolate (I have 55%)
Glaze:
150 gr dark chocolate
1 table. a spoonful of vegetable oil
rolled almonds for sprinkling
OR
2 tablespoons of apricot jam
1 table. a spoonful of rum or brandy (water)

Cooking method

  • Beat butter or margarine with a mixer, gradually adding sugar, salt, until creamy. Add eggs one at a time, beating each for about 0.5 minutes. Add the grated chocolate. Mix flour with baking powder and pudding and add with milk in two steps. Stir in the ground almonds last.
  • Put the dough in a prepared form, smooth and bake in an oven preheated to T 180 ° (convection 160 ° without preheating) for about an hour.
  • Leave the finished cake for 15 minutes in the form, and then shake out on the wire rack.
  • For the glaze, break the chocolate, add vegetable oil, melt in a water bath and pour over the cake. Sprinkle with toasted chopped nuts on top.
  • Or reheat the rum jam and pour over the cake.
