Ingredients

Dark chocolate 50 g
Yolks 3 pcs.
Protein 3 pcs.
Sugar 30 g
Rum 30 ml
Butter 50 g
Breadcrumb from a plain white loaf 50 g
Dried biscuit crumb 50 g
Milk 2-4 st. l.
Sugar, butter for greasing and sprinkling the mold
Chocolate sauce
Whipped cream
Dried nuts 50 g
Salt pinch

Cooking method

  • It is said that this unusual dessert "Mohr im Hemd" "Moor in a Shirt" appeared in Viennese cafes after the premiere in 1988 at the Vienna State Opera (German: Wiener Staatsoper, until 1918 Vienna Court Opera) of Giuseppe Verdi's opera "Othello" it is essentially a pudding that is baked in a water bath in the shape of a small googelhupf. The main ingredients are chocolate, bread crumbs, sugar, egg yolk, almonds, and alcohol. And it is served with chocolate sauce and not heavily whipped cream or ice cream.
  • Prepare the molds - grease them with butter 6 sprinkle with fine sugar and cool.

  • Beat the yolks with half the sugar, a pinch of salt, add the rum and chocolate melted in a water bath or in the microwave. Mix well.

  • Beat the softened butter with the second half of the sugar and mix with the yolk mixture.

  • Beat the whites until firm peaks and gently stir into the mixture.

  • Stir gently, without settling, crumbs with nuts and yolk-protein mixture. Fill the tins 2/3 full and place on a baking sheet. Fill a baking sheet with one liter of boiling (hot) water and place in a preheated oven. And bake the pudding at 180 degrees for about 30 minutes.

  • Allow the pudding to cool in the molds and separate the edges from the sides of the molds with a splinter, gently shake out the finished puddings.

  • Decorate the dessert with chocolate sauce, ready-made or made on your own, top with not very strong whipped cream, or place a scoop of ice cream next to it.
  • The recipe offers a rather complex chocolate sauce, so I mixed 2 tbsp. l. excellent cocoa, 1 tbsp. l. sugar, 1 tbsp. l. butter and 3 tbsp. l. cream, heated in the microwave for 600 power for a minute and poured over our Moors. Added cream on top. This amount was enough for 4 puddings.

Note

This dessert will appeal to lovers of brownie-type chocolate baked goods.
Dessert does not sound without sauce and cream.
To make some of the Moors darker, I added 1 tbsp. l. riding cocoa.

Kara, I was actually not so interested in the recipe as the name that is still used in tolerant Europe.We would have to keep the tradition so !! And there are better desserts in Vienna, IMHO.
