I use a Panasonic bread machine for the dough - a standard recipe, the program is a dough for dumplings. It turns out what you need. Again, the mechanization of the process. Usually I have three standard batches of dough. While I am sculpting dumplings from the first batch on a typewriter, I put the second in the bread maker for kneading, etc. There is no point in sculpting any more for me - there is limited space in the freezer.
You need to get used to the machine, but when the process is worked out, it turns out pretty quickly, it takes me 2 hours, including the preparation of minced meat and dough - about 5 kilos of dumplings.

And the second condition for the convenience of using the machine: above I posted a video advertising a German analogue machine. It must be done exactly like the aunt from the advertisement. There is no need for any unnecessary gestures about the thickness of the dough. I roll it several times at the thickest thickness, without reducing or adjusting, without cutting with the wheel. To make the dough ribbon more or less even. And then I immediately put the tape in the dumplings. The machine adjusts itself to the optimum dough thickness.
