Well. I didn't wait for Saturday, I was baking pancakes today at the Saf-moment. I got into a story about the stormy fermentation processes. I did not observe anything of the kind. The fermentation process took about two hours. The output is the same. In general, this is how the dough looks like before baking itself:

We scoop up carefully, trying to capture less bubbly dough from the depths! However, towards the end of baking, the dough is still smoother and the pancakes come out slightly less fluffy. Not critical, but I consider it necessary to report. I bake on high heat. Look like that's it...

Hairpin, pancake diameter 22 cm, scoop volume 60 ml. The pancakes turned out to be 19. And I did not guess the amount of flour!

I also baked "lace" today.
I started the dough with 1 tsp. SAF-moment on 1 liter of milk.
The flour was specially weighed by ay Hairpins... Immediately sifted 2 tbsp. flour (340 gr.). The dough seemed thin. I also added 2 tbsp. l. flour (60 gr.). But this was not necessary to do.
The total flour was 400g. for 1 liter (4 glasses) of milk.
It would be enough for 1 liter of milk 340-350g. flour.
Sugar I really instead of 1 tsp. poured 2 tsp. and 1 egg, but large.
I put the dough in 2 liters. saucepan on a saucepan of hot water.
After 50 min. my dough nearly spilled onto the table. I barely caught it.
The result is aromatic and soft pancakes.

I am thinking about fresh yeast ... But I already have experience of using active dry yeast. It turns out no worse than with SafLevure. Even faster! Only active yeast, I have a Saf-moment, I mix it with flour, and I already add milk with water, eggs and salt-sugar to it. After thoroughly kneading, add the oil. In the next baking of pancakes, I will try to determine the amount of flour in grams. Instead of a microwave oven, I warm the dough in a bowl of warm water. If you have time, you can leave the dough to ferment without heating at all. I put the dough in a transparent container. As soon as half of the thickness is permeated with bubbles, I begin to bake pancakes.

I apologize for stating it so floridly. I want to be clearer, but there are no data in figures, only sensations.

I had to play them twice yesterday evening. She weighed the flour, as promised. I put 325 grams in the first batch. It turned out to be very thin. But it turned out. I adjusted the recipe by reading the entire branch.
only slightly changed the liquid.

Water and milk 1: 1 1000 ml
Fresh yeast 15 g
salt 1 tsp
sugar 4 tbsp. spoons
Eggs 2 pcs.
Butter, melted 60 g
Vegetable oil 2 tbsp. l.
Flour 3 cups (glass 250 ml)

I always put sugar in order to be sweet, mine is so loved.
It didn't seem like a lot of oil, for me it's just right.

I kneaded everything in accordance with the instructions Freken Bock.
I put it in the oven, heating it to 50 grams, for 15 minutes

I baked and was happy !!
Before each pouring into the pan, I stirred the dough with a ladle.

And yesterday I distinguished myself - I decided to make it out of a liter ... I took 0.5 water, 10g of fresh yeast, and then everything was as usual ... The dough came up, I start to bake and understand - something is not right ... I remember my actions , it turns out, instead of 0.5 milk, I took 1 liter - I remembered how I threw out the bag empty (otherwise I would not have understood) ... I added 170 g of flour, put it in the micra ... it's still not that, thick and some dough without holes and pancake is not shiny, added rast. butter, warmed up - again, not that, took 0.5 tbsp. milk - boiled, added, in my opinion, and did not heat anymore ....... Pecu - phew, saved the pancakes - lace appeared Here I am such a mess
And the worst thing is in these pancakes - I sit at 11.15 pm and wrap my 4th pancake with freshly made strawberry jam and feel great

The first time, however, the fry screwed up. The dough was thick after proofing and I diluted it with warm milk. As a result, the pancakes were tasty, but not delicate. Then I took into account the mistake and poured less flour during kneading.

I had them in the oven at minimum heat for 30 minutes. Maybe it took longer, but everyone was waiting for the pancakes, and the guests also came for the pancakes. Or maybe there was not enough yeast - 1 h / l from cotton, or maybe something else))) But guess what, delicious pancakes, we'll still do it !!!
