Yeast pancakes with apple filling

Ingredients

Pancakes:
Wheat flour 2 stkn
Warm milk 2 + 1 stkn
Salt 1/2 tsp
Sugar 3 tbsp. l.
Chicken eggs 2 pcs
Butter 30 g
Fresh yeast
or 8 g dry
25 g
Filling:
Apples 3 pcs
Sugar 1/4 stkn
Butter 1 tbsp. l.
Cinnamon 1 tsp
Grated nutmeg
(optional)
1/4 tsp
Apple juice (or water) 1/2 stkn
Starch 1 tsp

Cooking method

  • Pancakes.
  • Dissolve yeast in 2 glasses of warm milk. Beat eggs with sugar lightly with a whisk, pour in melted butter. Add eggs to milk with yeast. Sift flour and salt and add to milk. Stir well, cover with a towel and leave to rise in a warm place for about 1 hour, until the volume triples.
  • After the dough rises, mix again, and dilute with another glass of warm milk (as I already noted, for thick pancakes, do not add milk anymore, but start baking immediately). Leave the dough in a warm place for another 10-15 minutes, and as soon as it bubbles again, start frying.
  • Grease a pan for pancakes with a thin layer of vegetable oil and bake pancakes, pouring a ladle over the dough.
  • Filling.
  • Peel the apples and cut into small slices. In a small saucepan, melt the sl. butter and add chopped apples. Heat them for a couple of minutes over medium heat, add sugar, cinnamon and nutmeg. Stir and add apple juice. Reduce heat and simmer until apples are tender. The cooking time and amount of sugar depends on the apple variety, so you can adjust this yourself to your liking. When the apples are ready, dilute the starch in 2 tbsp. l. cold water and pour into a saucepan. Bring to a boil and cook for another 2 minutes, until the applesauce begins to thicken (this is to prevent the filling from trying to "escape" their pancakes).
  • Cool the finished filling and wrap in pancakes.
  • Serve with the resulting applesauce or drizzle with caramel

Thank you, I really didn't wait and laid 3 eggs at random. Milk was added a little less than a glass (3rd I mean). The pancakes turned out to be good, tasty, but it didn’t come to the apple filling. Within a week you need to improve
