Yeast pancakes Vologda lace

Ingredients

Water and milk 1: 1 800 ml
Yeast Saf-Levure 1 tsp
salt 1 tsp
sugar 1 tsp
Eggs (small) 2 pcs.
Butter, melted 50-80 g
Vegetable oil 2-4 st. l.
Flour - to make the dough the consistency of kefir, rather liquid.

Cooking method

  • Dear Colleagues! Due to the fact that the child bought a 100-gram pack of Saf-Levure yeast instead of a small one, I bake yeast pancakes for the second time this week (and probably for the third in my life). Today it turned out superb.
  • All "by eye". I'm sorry.
  • 1) I poured the yeast with heated water for 10 - 20 minutes (so that it pops up with a "cap").
  • 2) Stir salt, sugar, eggs in warmed milk.
  • 3) I connected 1) and 2), tried not to beat, but to mix gently.
  • 4) Added flour to obtain the above-mentioned kefir consistency.
  • 5) Added butter and vegetable oil.
  • 6) I put it in the microwave at 170 W for 2 minutes, left it alone for 10 minutes, and then at 170 W for another 2 minutes. When a lush "cap" appeared on the surface, she began to bake on a fairly high fire.
  • As a result, thin lace pancakes came out, with a very tasty bread flavor. Here.

Very nice pancakes!
Freken Bock , and approximately how many pieces are obtained from this portion?

I’m not Freken Bock, but I think that there are 30-40 pieces, judging by the amount of milk, I also put my eyes on this recipe, but I’m thinking to reduce it by half, otherwise it will take a long time to fry, it’s easier for me to do this several times in smaller portions
Freken Bock
Girls, how many pancakes there were - I don't remember. Feels like 25. My frying pan is 26 cm. And the pancakes were thin. And, having already overeat, I can say, too much, it is quite possible to put less.
Ellka
And if there is no microwave? Such pancakes are unrealistic to make?
Qween
Who needs pancakes for dinner?
The photo was not very much, I was in a hurry - I really wanted hot pancakes.

Ellka, put the bowl of dough in the sink with warm water and the problem will be solved.

Ellka, the microwave just speeds up the process. It is quite possible without it. At least put a warm dough in the water, at least near the battery. It's okay if the process just takes place in a warm room. Well, the slower the dough will be like it, but it will still work. Try it in half.

qween , the photo does not open.
Qween
Oh, it's a pity that the photo cannot be seen. And if you leave the topic, and then re-enter? The site is working very hard now.
I fried the pancakes a little thicker, next time I need to put less flour. And yet, at the end the dough became thicker, I will also take into account.
Delicious!
galka
Freken Bock, I also bought saf levure yeast today, so I'll try it on the weekend, the only thing it seems to me is that you need to put less butter, otherwise it will probably be very greasy
Cubic
I confirm, the photo is not visible.

, oils can be, even needed, less, I mentioned this above, I cannot fix it in the recipe, there is no longer the REDIT button.

qween , you have no choice but to re-upload the photo!

Yesterday I baked pancakes with counting, it turned out exactly 20. Frying pan - 26 cm, ladle with which I pour the dough - 60 ml. 60 x 20 = 1200, but there was absolutely no such test. What is the trick - I will not.

Girls, now I don't see my picture either. And you? Maybe throw it off again?

Yes, for some reason she was not immediately visible
be sure to take a picture again! people want to see! )

Freken Bock, yes, I noticed later that you wrote that you still need less oil
but in general it is strange that there are only 20 pancakes, I have 500 ml of milk out of 500 ml of milk (pancakes are really not yeast, but also very thin) 14 pancakes come out, a frying pan is really 24 cm, does 2 cm really affect that? )
galka
qween, I also can't see both photos (
Qween
Well, what is it? I can't see both either.
I have no more pictures to try again.

I can say, as an excuse, that the pancakes are pretty and tasty. In addition, it is very easy to prepare.
Tempter, I wanted to look closely (in order to preserve the figure).
Although I have no experience in baking yeast pancakes, one of these days I will definitely try to make it.
Qween
Lenusya , what is there at a glance, we are waiting for a photo report.

To speed up the process, we put a saucepan with yeast dough in the oven with a temperature of about 40 grams.
The oven is electric.
Lenusya
Freken bok, thanks for the recipe.
I never thought that everything would be so easy and simple with yeast pancakes.
It turned out very thin and tasty.

See see!!!
And your Lenusya the most beautiful pancakes, and I see mine again too!
And, it seems, next to the pancakes, in your photo, there is also a cottage cheese casserole.
Noble, you see, there will be dinner.
Freken Bock
Lenusya , to your health!

The smell is great, if you "bury" your nose in a stack of pancakes, tell me?

There was also another recipe for pancakes, where beer is taken instead of water-milk. And then everything happens as with ordinary pancakes. I remember once I did it, I didn't like it, it tasted too spicy, not bread, but beer. But maybe I'll experiment some more time, I'll tell you later what happened.
Lenusya
qween you talked so deliciously about them that you could not resist.
My son is a big lover of cottage cheese casserole (the only dish that we eat without persuasion, and we can eat it for breakfast, lunch and dinner) and pancakes.

Freken bok, the smell is wonderful - the mother-in-law came running to find out why it smells so delicious 2 minutes after the start of baking.

baked pancakes according to your recipe, though without yeast and sourdough. Pancakes baked only the second time in my life, they turned out very beautiful. and most importantly - delicious !!!

Freken Bock
Cubic , very nice! And the sourdough is generally super, I guess. It's a pity that my sourdough didn't go well. Kvasila-leavened for a week, and eventually threw out this stinking sourness. Toward the end, I baked a dubious-looking brick on it ... But that's a completely different story.

The time has not yet come, so ... I also raised her not the first time, not one approach was ...

now it is growing, it’s a pity to throw out half of it when feeding, but we don’t eat so much bread. Now I've mastered pancakes, and I'm baking pizza on it ... I'll get fat. No, probably we should throw everything away
Alexandra
I almost forcibly fed my pancakes today

We should probably still throw away the surplus ... while it’s salted, feed it less often
Admin

Put the excess in the freezer, then it's just a godsend
Mouli
Cubic, how much sourdough did you put instead of yeast?
Cubic

and how much leaven did you put instead of yeast?

I have a bad habit of doing everything by eye .. but I can say that I spilled about 100 grams of thick French sourdough in milk with water, as a result, the total amount of dough was about 800-900 ml.

Further, almost according to the recipe (that is, I made the dough in HP, and not in the microwave). When the dough bubbled up, I added the rest of the ingredients there, turned on the kneading again and left it to wander a little in the HP bucket.

I baked these pancakes at the saf moment, the amount of yeast according to the recipe, I just did not dilute them in liquid, but mixed them with flour, as the manufacturer recommends ... The pancakes are wonderful, bake, you will not regret it!
Yanochka
Thank you so much !!! Happy Shrovetide !!! I'm going to make dough for pancakes
Hairpin
I'll spoil your raspberries for an hour ...

I COULD NOT GET!!!

I rewrote the recipe like this:
Water and milk 1: 1 - 200 + 200 gr.
Pressed yeast - 8 gr.
Salt 1 tsp
Sugar 3 tbsp. l.
Eggs - 1 pc small
Butter, melted 40 gr.
Vegetable oil 2 tbsp. spoons.
Flour - 210g.

1) Pour the yeast with heated water for 10 - 20 minutes (to float up with a "cap").
2) Stir salt, sugar, eggs in warmed milk.
3) I connected 1) and 2), tried not to beat, but to mix gently.
4) Added flour to obtain the above-mentioned kefir consistency.
5) Added butter and vegetable oil.
6) Put on proofer until the cap appears.

Question number 1. Is 8 grams of compressed yeast half enough or more?
Question number 2. If you keep on proofing without a microwave (well, in the oven with a light bulb), then how long? Otherwise I mix everything in a plastic bowl, you can't put it in the microwave.
Question number 3. Where else could I go to bed?

I WANT LOOPS, LIKE ALL !!!

Freken Bock
Hairpin , and where did the recipe come from? Your recipe is quite accurate and differs from mine (the amount of salt, sugar, about flour - I won't say, because I'm guided by the consistency) I have yeast in granules, those that dissolve in water. The caps pressed in the water will not float up, so I don't know what to focus on in this case. This recipe for me, I repeat, is completely random, and not felt and suffered through suffering. It turned out immediately and delicious. However, point by point:

1) This Qween she knows she baked with raw yeast.

2) It is impossible to say the exact time, it depends on the strength of the yeast in the first place. Guideline (I cook in a transparent bowl) - almost the entire thickness of the dough becomes riddled with bubbles, the volume of the dough approximately doubles. Recently, the microwave has been replaced by a bowl of warm water.
3) And what did not work out? Didn't get up? Thick? Loose ones?

A friend of mine just the other day baked these pancakes with Saf Moment yeast, she did not find others. He says that fermentation processes took place instantly, before our eyes. All of this is happening slowly with me, the family will be exhausted, there are times when my pancakes ripen! So maybe you didn't have enough time to get up?

Hairpin , and where did the recipe come from?

Well ... this is your recipe ... I just edited it ...
1. Halved.
2. Sugar - everyone is sweet for me ...
3. Salt ... decided that 1 or 1/2 teaspoon does not matter.
4. And I wrote the amount of flour after the first try. Admin advised, as a first approximation, to take one glass of milk / liquid - one glass of flour. That is, 400/250 = 1.6. Then flour - 1.6 * 160 = 256 grams. But the dough was very thick. So I reduced the flour ...

And the technological map was left almost unchanged.

They are much thicker !!! And I can't pour a smaller amount in the pan ...

And I kept it in the oven until the hat appeared on top. Isn't that enough? Did you have to wait for the hat to get dry?

Hairpin, my alignment was different:
It was understood that the glass contains 250 ml of liquid and 150 grams of flour - a ratio of 1.7 and then you need to adjust the liquid to the desired density.
My observations:
After the first proofing, I bring the dough to the required thickness of the dough and then put it on the second proofing and no longer adjust the dough.
If you correct it with flour or liquid, then the dough must again be proofed, and this is already superfluous for the dough.

Hairpin, maybe Romina proportions should be applied to regular pancakes (not yeast).
I usually use this proportion for thin pancakes.
1 part flour: 2 parts milk.
If you need a little thicker pancakes,
then 1, 5 parts flour: 2 parts milk. (1.5 cups flour: 1 cups milk).
Hairpin
Then 400 gr. liquid (1.6 cups) you need 0.8 cups of flour (128 grams)
Mom dear !!! Well, I had 1.64 times more flour !!!

As they say, the road will be mastered by the one walking ... And wait for a leaky hat ...

Freken Bock! Just a little bit and I will bring the form of your recipe in line with the photos !!! Well, this is to ensure that he will be just as good. If they don't shower me with slippers before ...
Freken Bock
Hairpin, well, I'm not a techie at all ... The numbers are not mine. The consistency of the dough before proofing should be like kefir. Total spreads in the pan a little slower than the usual dough for thin pancakes. It should rise well. I repeat, the thickness will be riddled with bubbles. Then you get the necessary "roundness" and "holes". Why am I so about sugar. This, of course, is personal, but in these pancakes it is precisely the bread-like taste and smell that I like. And my children are catching up with honey and condensed milk.

Understandably!
Hairpin, as I understood from the words of Tanya-Freken Bok, that the dough should be thicker than thin pancakes. So you immediately make 2 parts of the liquid: 1 part flour, but still sift the flour (0.5 parts).
Fry one test pancake and if there is no lace, then add the rest of the flour to get a 2: 1.5 result.
I hope it works.
Freken Bock
Tanyusha, no, you need to decide on the consistency of the dough right away. If you dilute it after it has already fermented, then such "lace" will not work, and this will also affect the aroma and taste.
Hairpin
If you take 1.5 flour, you get 192 grams. And I took 210. The margin of error is 8.6%. It doesn't matter. So I almost tried this option already.

Freken Bock! What happens if the dough spreads faster than necessary? I just don't know how to do it and try to figure out what to focus on.

Tanyush, exactly. I forgot they were yeast pancakes.
Freken Bock
Hairpin, you get thinner pancakes and just that. If it turns out completely liquid, it will be the same as with the unleavened pancake dough - garbage.

Oh, I'll clarify. With unleavened pancake dough, if diluted too thin.
Zhivchik
Hairpin, then do 2: 1 and add a couple more tablespoons of flour.
I also wanted to bake such lace to tell you the exact proportion. If I had a packet of "Levura", I should have been lying around, I went looking for it, no, I have already used them.
So what you have to do and tell us.
