Cake "Tarhunovoe delight"

Ingredients

For biscuit:
Wheat flour 144 g
Cognac or lemon juice 25 g
Sugar 144 g
Egg 4 things.
For Cream:
Cottage cheese (15% Fat) 400 g
Instant gelatin 20-40 g
Sugar 140 g
Fresh. squeezed juice of half a lemon
Lemonade 150 ml
Vanilla sugar 1 pack.
Chilled heavy cream 30-35%
+3 full art. l. granulated sugar
400 ml
For decoration:
Colorless jelly
(for 500 ml of liquid)
2 pack.
Lemonade 500 ml
Sugar 4 full Art. l.

Cooking method

  • 1. Biscuit: Separate the yolks from the Proteins, beat the Proteins with a Mixer into a strong Foam, gradually adding Sugar. Beat the yolks separately with a mixer, then add them to the whipped whites and mix until smooth, using a mixer. Add the sifted flour to the egg mixture in several stages, stirring gently with a large spoon from bottom to top. Preheat the oven to 180g. And bake the Sponge cake until cooked 15-20 minutes. (DO NOT OPEN THE OVEN for the first 10 minutes)
  • 2. Cream: Pour gelatin with cold water and let it swell. Stir cottage cheese, sugar, lemon juice, 150 ml "Tarragon" until smooth (preferably in a blender). Drain the water from the gelatin and stir constantly over medium heat until completely dissolved, but do not boil! Pour the finished gelatin into a separate cup, first add 4 tbsp to it. tablespoons of curd mass, mix well and only then add gelatin to the remaining curd mass. Let the curd mass stand for 8/10 minutes so that it begins to thicken.
  • 3. At this time 400ml. beat chilled fatty Cream with a mixer into a strong foam, gradually adding 3 tablespoons. Spoons of Sugar + vanilla. 10 table. Put the spoons of whipped Cream in the Fridge, for Decoration. (And it is better to whip a little more separately later)
  • 4. Add the whipped cream to the curd mass, mix well and leave for about 15 minutes. stand.
  • 5. Assembly: Put the biscuit in the form, put our curd-creamy mass on top and send the cake to the refrigerator for 6 Hours to Thicken.
  • 6. Mix Jelly Powder with 4 tablespoons. Spoons of sugar, gradually pour in 500 ml of lemonade, mix so that there are no lumps and, over medium Heat, stirring constantly, bring to a Boil. Pour hot Jelly onto the cake (I still allowed the jelly to cool a little, since I needed an even color), smooth it out, as it cools down, send it to the Refrigerator for another 1 Hour.
